How To make Fat Free Pumpkin Bran Muffins
Non-stick cooking spray 1 c Canned solid-pack pumpkin
1 c High-fiber cereal shreds
3/4 c Skim milk
1/3 c Corn syrup, light or dark
2 Egg white; slightly beaten
1 1/4 c Flour
1/3 c Sugar
2 ts Baking powder
1/2 ts Salt
1/2 c Raisins
Spray 12 (2-1/2") muffin cups with cooking spray. In medium bowl combine pumpkin, cereal, milk, corn syrup and egg whites. In large bowl combine remaining ingredients. Add pumpkin mixture; stir until well blended. Spoon into prepared muffin cups. Bake in 400 F oven 20 minutes or until toothpick inserted in center comes out clean. Cool in pan 5 minutes. Remove; cool on wire rack. Makes 12 muffins. 70% carbs/ 20% protein/ 10% fat
ALL VEGAN

Healthy Protein Oat Bran Pumpkin Breakfast Muffins | Tiger Fitness
Nutritionals Per Muffin:
Protein - 6g
Carbs - 14g
Fat - 2g
Instructions:
Preheat oven to 350F
You will need 2 mixing bowls
In one bowl mix:
3/4 cup pure pumpkin
1 tbs melted coconut oil
1 egg white - 46g
1 cup cashew milk unsweetened
1 tbs vanilla extract
1/4 cup sugar free syrup
dash of ginger
In separate bowl mix:
1.5 scoops MTS Whey
1 cup oat bran
1/2 cup flour
1/4 tsp baking powder
dash of salt
dash of cinnamon
dash of pumpkin pie spice
Add wet ingredients to dry and mix together
Add 1 tbs mini chocolate chips to batter and stir in
Place batter into muffin pan
Add evenly 1 tbs mini chocolate chips to the tops of the muffins
Bake at 350F for 15-20 min

Low Fat Pumpkin Muffin Recipe for the Holidays
One alternative to those who are looking to reduce their fat intake during the holidays. The muffin itself is low fat. For those who want a tasty treat and who are not watching their fat, you can add the icing as well.
18.25 oz. Duncan Hines Golden Vanilla Super Moist Cake Mix
2 tsp. Pumpkin Pie Spice
1 cup canned Pumpkin
1 cup Water
Mix ingredients well, Spray muffin liners or tin with non-stick cooking spray
Fill tins to 2/3 full
Bake at 350 degrees for 20 to 25 minutes, insert toothpick, done when toothpick comes out clean.
Cream Cheese Frosting:
8 oz. 1/3 less fat cream cheese
1/2 cup canned pumpkin
1 tsp vanilla extract
1 tsp cinnamon
1 tsp pumpkin pie spice
5 Tablespoons packed brown sugar
Whip until mixture forms peaks.
