Gluten-Free Mixed Fruit And Nut Muffins

These Gluten-Free Mixed Fruit And Nut Muffins are the perfect healthy muffin recipe. They are deliciously soft and moist and made with simple ingredients. These fiber-filled muffins make the ultimate healthy breakfast.
A warm fluffy muffin has to be one of my favorite foods of all time.

INGREDIENTS:
Dry Ingredients
1 cup maple crystals
2 cups oat flour
1 cup gluten-free flour
1 teaspoon baking soda
1 ½ teaspoon baking powder
2 tablespoon ground flax seed
⅓ cup raw pumpkin seeds
⅓ cup raw hazelnuts
½ cup dried blueberries
Wet Ingredients:
¼ cup vegan yogurt
1 cup unsweetened soy milk
1 tablespoon apple cider vinegar
½ cup unsweetened applesauce
1 teaspoon vanilla extract
6 tablespoon water
INSTRUCTIONS:
In a small bowl mix together the ground flax seed and the water and set aside for 10 minutes.
Combine all the wet ingredients (including the flax egg) together in a large bowl and mix until smooth.
Add all the dry ingredients except the fruit and nuts to the wet ingredients and mix until a smooth muffin batter has formed.
Add the pumpkin seeds, hazelnuts, and blueberries to the batter and mix.
Line a muffin tin with muffin liners and preheat the oven to 350.
Use an ice cream scoop to scoop the muffin batter into the lined muffin tin.
Once the oven temperature has reached 350, place the muffin tin into the oven and bake for 25 minutes, or until the tops are golden brown or you can stick a toothpick in the center of the muffins and it will come out clean.
Remove from heat and place the muffins on a wire rack to cool for 5-10 minutes before serving.

2 eggs
50 g oat flour(1/2 cup)
1 teaspoon baking powder
chocolate chips for decoration(optional)
bake 20-25 minutes at 180°C /360°F

DRY INGREDIENTS
2 cups (300 grams) all-purpose flour
1 tablespoon (12 grams) baking powder
¼ teaspoon salt

½ cup (50 grams) walnuts chopped

Delicious, moist and fluffy banana carrot muffins are really easy to make. Whip them up quick, in just 30 minutes, with one bowl! The perfect make ahead breakfast, snack or dessert. This healthier recipe is sweetened naturally with extra ripe bananas and agave nectar (zero refined sugar). We're also using whole wheat flour for a less processed, more nutrient dense treat. Whole wheat flour isn't gluten free, but you can sub a gluten free baking flour. Find more info on how to make this substitution in the post!

Healthy Blueberry Muffins???? This recipe is gluten-free, refined sugar-free & dairy-free! These muffins are such a yummy dessert or snack idea and you could even make these for breakfast☀️???? The recipe is super simple and uses ingredients you might already have at home! These muffins are so moist and super delicious????
I used Finnish bilberries in these muffins but you could of course use regular blueberries as well whichever you have available where you live☺️ Finnish bilberries grow wild in Finnish forests and the berries are smaller than cultivated blueberries. The skin of Finnish bilberries is dark blue and the inside is purple, that’s why the muffins are so purple????
Ingredients:
2 mashed bananas
2 eggs
1/4 cup peanut butter (60 ml)
1/3 cup gluten-free flour mix (or regular flour if not coeliac/intolerant/IBS sufferer etc.) (80 ml)
1 teaspoon baking powder
1/2 - 1 teaspoon cinnamon
1 cup of blueberries/bilberries fresh/frozen (240 ml)
1. Mix the wet ingredients together
2. Add the dry ingredients and stir until combined
3. Fold in the blueberries
4. Scoop to muffin tins lined with muffins liners (or greased muffin tins)
5. Bake at 180 Celsius degrees / 350 in Fahrenheit for about 15-20 minutes or until a toothpick inserted to the center comes out clean
6. When the muffins have cooled a little bit, transfer them to a wire rack and let cool and enjoy! (Store in an air-tight container)
