The Best Keto Friendly Zucchini Bread / Eve Keeps You In The Know
This video is to show you how to make Keto-friendly zucchini bread. The bread is nutritious as it is made with health-friendly ingredients that include almond flour, rolled oats, coconut milk, coconut oil, walnuts, dried cranberries and lots of freshly grated zucchini. As you know rolled oats are gluten-free, whole grain and healthy. I use coconut oil and coconut milk for the medium-chain triglycerides, the fatty acids that help increase good cholesterol and decrease bad LDL in the body. Coconut oil also helps people with dementia and Alzheimer’s disease by enhancing brain energy.
Almonds are a good source of Vitamin E, also rich in protein and high in fiber. Zucchini is rich in antioxidants, lutein, zeaxanthin, Vitamin K and magnesium. With dried cranberry and walnuts mixed in the recipe, the bread is highly nutritious and very healthy for the whole family to enjoy.

Recipe and Directions
1 ½ Cups Grated Zucchini ½ cup Almond
½ Cup Dried Cranberry 1 cup Almond Flour
1 cup Rolled Oats Flour 1 tsp Baking Powder
1 Tsp Cinnamon Powder ½ Tsp Sea Salt or Himalayan
½ Cup Brown Sugar, Coconut Sugar 3 Eggs
1/3 Cup Coconut Oil 1 Tsp Vanilla Extract
¼ Cups Coconut Milk (Or your preferred Kind of Milk)
Pulverize 1 cup of Rolled Oats in a blender to turn it into flour.
Combine all the dry ingredients together. 1 cup almond powder, 1 cup rolled oats, ½ a cup brown sugar, ½ tsp sea salt (I like using sea salt or Himalayan for their natural minerals) 1 tsp baking powder, 1 Tsp Cinnamon Powder, Mix well. Set aside.
In a separate bowl, combine all of the wet ingredients. Toss in 3 eggs, 1/3 Cup coconut oil, 1 tsp Vanilla Extract, and ¼ Cup Coconut Milk. Toss in the flour mixture, and stir well. Toss in the zucchini and mix well. Add the walnuts and dried cranberry. Mix well. Pour into the greased pan. Add a few walnuts on top to make it look so good. Grease the loaf pan with coconut oil. Bake at 350 degrees.

INGREDIENTI:
3 uova
180g zucchero
150g olio di semi
420g zucchine
215g farina
60g cacao
10g lievito per dolci
1 pizzico di cannella
100g cioccolato fondente a pezzi (o gocce di cioccolato)
PREPARAZIONE:
Sbattiamo lo uova con lo zucchero e l’olio. Uniamo anche il resto degli ingredienti e le zucchine grattugiate finemente. Per ultimo il cioccolato tritato e, se vi piace, qualche noce (consiglio le pecan). Foderiamo uno stampo da plumcake con carta da forno e inforniamo a 190° x 45/50 min

Healthy Apple Cinnamon Zucchini Bread
INGREDIENTS:
1 medium Zucchini, shredded and squeezed (or 1/3 cup)
3 small or 2 medium Apples, diced small
1.5-2 Cups Almond Flour,finely ground
4 eggs
1/3 cup full fat coconut milk
2 tsp vanilla extract
3 TBSP tapioca flour
3 TBSP
1 tbsp cinnamon
1/2 tsp salt
1 tsp baking soda
1/4 tsp allspice
1/3 cup pure maple syrup
DIRECTIONS:
1.Set oven to 350 degrees. Lay out three mixing bowls. One for dray ingredients, one for wet ingredients, and one for eggs. Place all ingredients in their appropriate bowls.
2.Whisk and beat eggs gently. Add to other wet ingredients. Then, add all wet ingredients into dry ingredients and mix well.
3.Fold in 1/2 shredded zucchini and mix. Add remaining zucchini and mix well again.
4.Add diced appled and fold into mix gently.
5.Spray 4 small bread-loaf pans well with cooking oil, line with parchment paper strips to fit in the center of each pan for easy lifting out of pan.
6.Carefully pour batter into pans. Only fill pans half way to give room to rise.
7.Bake at 350 for 60-70 minutes or until loghtly golden brown and a toothpick comes out clean.

Zucchini bread: preheat oven to 350°
In a large bowl add:
3 Large Eggs (Beat before adding the other ingredients)
2 cups Sugar (Gradually adding to the beaten egg mixture)
2 cups zucchini grated
1 cup vegetable oil
Blend well together
Add to the wet mix:
1 tsp salt
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
3 cups Sifted all purpose flour
1 cup chopped walnuts (optional)
Mix until well blended together
Pour into 2 well greased and lightly flours loaf pan or 1 loaf pan and 1 6 muffin pan
and bake for 50 min checking with a toothpick and making sure that it comes out clean.
