Today we are going to do a Cooking Show: How to cook Hungarian Chicken Paprikash in collaboration with the Embassy of Hungary Singapore
In case you would like to try out this recipe and you are in Singapore, we suggest you visit Huber's Butchery at Dempsey Hill, where you will not only find paprika but other Hungarian products, like wines and salami as well.
The recipe is based on a recipe book from Helga's great-grandma.
INGREDIENTS:
- 2 onions, peeled and minced
- Salt to taste
- 2 tablespoons of oil or lard
- 2 tablespoons Hungarian sweet paprika
- 1 kilogram chicken pieces
- 2 tablespoons sour cream, plus more for garnish if desired
- 1 tablespoon flour
- Parsley
- Serve with Hungarian galuska (dumplings)
INSTRUCTIONS:
Heat the oil in the pot, add the onions, sprinkle with some salt, and cook, covered, over very low heat until the onions are glossy, but not browned.
Turn off the heat (so the paprika doesn’t burn and become bitter) and stir in the paprika.
Add ½ cup of water and mix.
Turn the heat back on low and place the chicken pieces in the pot. Sprinkle salt on the chicken, cover, and cook for about 30 minutes. Check every few minutes to see whether it needs more water, and add a bit if it does.
In a small bowl, mix the sour cream and the flour.
Add the sour cream mixture to the paprika sauce and stir until blended. Cook for a minute or two, but don’t let the sauce come to a boil. Pour the paprika sauce over the chicken pieces.
Remove the pieces of chicken and place the pieces on a serving platter.
Garnish with a spoonful of sour cream, if desired, and sprinkle with paprika.
HOW TO MAKE HUNGARIAN GALUSKA (DUMPLINGS)?
INGREDIENTS:
- 400 g flour
- 1 tsp. salt
- 2 eggs
- 100 ml water
INSTRUCTIONS:
Mix the flour and salt, and make a well in the center.
In a separate bowl, lightly beat the eggs and the water and then add to the flour mixture. Mix until just blended.
Push the batter directly into the boiling water through a spaetzle plane propped on the pot, or use a spoon to tear off pieces of the batter and drop them into the water.
The dumplings are ready when they rise to the top of the water.

Discover How to Make the Most Delicious Chicken Paprikash You've Ever Tasted!
This incredible traditional Hungarian dish is full of flavor and is sure to be a family favorite!
Ingredients
6 chicken thighs bone-in, skin-on
3 tablespoons pork lard , or butter (lard is traditionally used and we strongly recommend it for the best flavor)
4 teaspoon sweet paprika preferably Hungarian paprika
½ teaspoon smoked paprika
1 medium onion finely minced
1 red bell pepper finely minced
4 cloves minced garlic
1 cup canned crushed tomatoes or 1 large ripe tomato, chopped
1 ½ cup chicken broth low sodium
2 tablespoon flour all-purpose
⅓ cup sour cream
⅓ cup milk
3 tablespoon parsley chopped
salt, pepper to taste
Instructions
1. Season chicken with salt and pepper and liberally rub it with paprika and smoked paprika.2. Heat lard in a Dutch oven or non-stick pan and on a medium heat. Add minced onion and bell pepper and sauté until translucent, about 5 minutes. Add chicken and brown on both sides, about 5-7 minute per side. Add garlic during the last minute of cooking.3. Stir in chicken broth and tomatoes and bring to a boil. Reduce the heat to medium-low, cover with a lid and simmer for 40 minutes or until instant meat thermometer reads 165 F. When chicken is ready, remove it to a clean plate and set aside.
4. While chicken is simmering, in a small bowl whisk together sour cream, flour, and milk.
5. Add the sour cream mixture to the pan and simmer stirring constantly until the sauce thickens, about 5 minutes.6. Return chicken to the pan, cover with the sauce. Sprinkle with chopped parsley and serve immediately! Enjoy!

Representative of Hungarian Trade Office Daniel Lorincz introduces the ingredients needed to make chicken paprika. The ingredients include diced chicken breast, chopped onions, paprika powder, chopped parsley, pickles, tomato, bell peppers, and sour cream. As for the side dish, Hungarian dumplings, you’ll need eggs, flour, salt, and oil.
The first step is to dice the onion, before heating it up to glaze it. Then, put the chicken breast in to heat up as well.

This now looks like our national colors, which is red, white, and green. Let me add a bit of water to it. Now we can put it to rest for maybe a maximum 30 minutes.
After leaving it to boil for a maximum 30 minutes, it''s time to add flour and mix it with sour cream. Then, add a bit of salt and pepper, and stir it all together.

Why we do this is to borrow the heat to gradually heat up the sour cream and make it soft.
To prepare the side dish of Hungarian dumpling, add some salt into the boiling water. Prepare 200 grams of flour and add salt. Then, add the egg yolk and take everything to a boil.

What we are aiming for here is like something like a pizza dough. But still a lot stickier.
