How To make Double Corn Muffins
1 cup all-purpose flour
1 cup yellow cornmeal
1/4 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/8 teaspoon ground red pepper
1 cup milk
1/4 cup butter or margarine -- melted
1 large egg
1 can (8-3/4 oz) corn -- drained
Preheat oven to 425F. Grease 12 muffin-pan cups.
In large bowl, combine flour, cornmeal, sugar, baking powder, salt, and red pepper. In medium bowl, whisk together milk, butter, and egg. Stir into dry ingredients just until combined. Stir in corn. Spoon into prepared pans. Bake 20 m inutes. Unmold and serve warm.
Per muffin: Cal 175 / Fat 6g (Sat 3g) / Chol 33mg / Sodium 318mg / Carb 27g / Prot 4g
Note: Can also add 1 can chopped chiles, drained, or a chopped jalapeno or two.

Ingredients Used
1 pk Jiffy Corn muffin mix
1 15oz whole kernel corn (drained)
1 15oz can cream style corn
1 cup sour cream
1 tsp vanilla extract
1 stick melted unsalted butter
2 eggs @ room temp
Mix all the ingredients and bake in a greased 9x13 pan for 40-45 minutes. Allow to cool and set for 15 minutes before serving. Enjoy.

A basic light corn muffins, with a slight tang from the buttermilk Served warm with honey or butter.
3/4 cup all-purpose flour, 3/4 cup yellow cornmeal, 2 teaspoons baking powder, 1 teaspoon baking soda, 1 Tablespoon granulated sugar, 1/2 teaspoon salt, 1 egg slightly beaten, 1 cup buttermilk, 1/2 stick butter melted and cooled.
Combine all dry ingredients in a bowl and stir. add egg to milk, add butter until all is mixed. Don't over mix. Bake at 400 for 15-20 minutes Yields 9 regular size muffins

Betty demonstrates how to make Sour Cream Corn Muffins. The sour cream gives these muffins a delightful tangy flavor.
Sour Cream Corn Muffins
1 cup self-rising cornmeal mix
½ cup vegetable oil
2 eggs, well beaten
1 cup sour cream
one 8.25-ounce can cream-style corn
Beat the eggs in a large bowl and stir in all of the other ingredients. Mix until well combined. Use an ice cream scoop to dip batter out into muffin tins that have been sprayed with cooking oil spray. Bake at 450 degrees (F) for about 12 to 15 minutes, or longer if needed. Ingredients below are per every two boxes of cornbread you use:
2 Jiffy Honey Cornbread box’s
2/3 cups of Whole Milk
2 Eggs
2 tbsp. of Honey
2 tbsp. of Sugar
2 tbsp. of melted butter
(Measurements may vary depending on how much you want to make)

Serving size: 12 muffins
Ingredients
1 can (15.25OZ) Whole Kernel corn (drain and save the juice)
(divide to 1 cup and 3/4 cup)
1 large egg
1/4 cup sugar
2 tablespoon melted butter (salted)
5 tablespoon corn juice
1/4 cup milk
1 1/2 cups all purpose flour
2 teaspoon baking powder
4 oz cheddar cheese (grated) and more for toppings
