Blueberry Crumb Cake is a light and moist coffee cake that is bursting with blueberries and has a special crumb topping (streusel topping) made of flour, butter, cinnamon and sugar.
Blueberry Crumb Cake
Ingredients for Crumb Topping:
150g sugar
50g flour
1 teaspoon cinnamon
100g butter
Ingredients for Cake:
250g plain flour
400g blueberries
50g vegetable cooking oil
2 eggs
150g sugar
¼ cup sour cream
¼ cup milk
lemon zest from 1 lemon
½ teaspoon salt
1 teaspoon vanilla
2 teaspoons baking powder
Method:
Make the Crumb Topping
1. Mix the dry ingredients together.
2. Rub in the butter until the mixture resembles bread crumbs.
3. Set aside.
Make the Cake
1. Preheat the oven (190°C/374°F).
2. Butter, line and flour the cake tin.
3. Sift the flour, baking powder and salt.
4. In another bowl, beat the oil and sugar.
5. Add the lemon zest and continue beating until light and fluffy.
6. Add the eggs one at a time.
7. Add the vanilla and continue beating until the mixture is well combined.
8. Add 1/3 of the flour, mix, and then add the milk.
9. Add another 1/3 of the flour, mix, and then add the sour cream.
10. Add the final 1/3 of flour.
11. Fold in the blueberries.
12. Spoon the thick cake batter into the cake tin.
13. Sprinkle the prepared crumb topping on top of the cake.
14. Bake in oven for about an hour or until a toothpick inserted into the cake comes out clean.
15. Let the cake cool before removing it from the tin.
16. (Optional) Sprinkle icing sugar over cake before serving.

3/4 cup sugar

2 cups all purpose flour
1/3 cup whole milk
1 & 1/2 cup blueberries
1 & 1/2 tsp baking powder
1/4 tsp salt
Topping;
3/4 cup brown sugar
1/2 cup all purpose flour
1 tsp cinnamon
120 grams butter
