CHRISTMAS LIMA BEAN SOUP | Creamy Beans Soup (Vegan) | BabyBlueBerry Recipes
I bet you have never tasted such big and creamy beans! They literally melt into your mouth!
Beans are full with great nutrition and will keep you satisfied for a long long time. They are a great source of carbs, fiber, iron, magnesium, phosphorous, potassium, folate and a ton of PROTEIN! Yes, protein comes from plants too! In this case, legumes ????
The recipe is easy to make, especially if you have a pressure cooker, if not… take a look at my tips… it is still easy ;)
It is a perfect comforting dish during the cold days!

Prep time: 15 min.
Cook time: 45 min.
INGREDIENTS:
6 Cups Christmas Lima Beans (cooked)
6 Cups Christmas Lima Beans Broth
2 Cup Veggie Broth
1 Onion (chopped)
3 Carrots (chopped)
1 Cup Kale & Beet Stems (chopped)
1 Red Pepper (chopped)
4 Cloves Garlic (chopped)
1 Handful of Greens (kale)
½ tsp. Dried Mint
2 tbsp. Red Paprika
1 tsp. Black Pepper
½ tsp. Kalonji (optional)
½ tbsp. Turmeric
½ tbsp. Cumin
1 tsp. Red Chili Flakes
1 tbsp. Himalayan Salt
INSTRUCTIONS:
Cook 2 cups of the Christmas Lima Beans for 10 minutes in a pressure cooker. Make sure to add a lot of water - around 8 cups.
Transfer all the cooked beans (approximately 6 cups) in a large pot over medium fire.
Add all the beans` broth that they were cooking in and the additional cups of veggie broth. Cook on medium fire for 8 minutes.
Add the onion, carrots, kale and beet stems, garlic and pepper. Stir well and cook on medium fire for 2 min. Then lower fire to simmer for 4 min.
Add all the spices: dried mint, red paprika, black pepper, kalonji, turmeric, cumin, red chili flakes, Himalayan salt. Stir well and simmer for 10 minutes.
Stir occasionally.
Add the greens (kale) and stir well.
Turn of the heat and serve hot,

TIPS:
* If you do not have a pressure cooker at home, it will take you more time to prepare the beans. However, you can do it in advance. To speed up the process, soak in the beans in water overnight. Next, boil them 2 or 3 times until they start getting softer. DO NOT put any salt in the water while boiling them, otherwise it will take you forever!
*Kalonji is a spice that not everyone has in their kitchen, so I recommend you substitute it for cumin, or skip this one.
*Using the kale stems gives a great texture to the soup and adds additional vitamins to this nutritional value of the soups. Not to mention, it is a great way to use this part of the kale that people usually throw away. However, if you prefer you can substitute them for another crunchy vegetable, for example celery.
* Feel free to adjust the salt to your own taste.

Cuffin Season Comfort Food: Creamy White (Lima) Bean Soup & Jalapeno, Cheddar, Cornbread????????
Ingredients
1 lb Lima beans (or white, navy or northern)
1 pack of Cajun Style Andouille Sausage
1 tablespoon of Thyme
1 tablespoon black pepper
1 tablespoon of Slap Ya Mama
1 tablespoon of minced garlic
2-3 Bay leaves
1 cup white onion
1 cup green bell pepper
1 small jalapeno (optional)
6-8 cups of chicken broth
Jalapeno Cheddar Corn Cornbread
1 box of Jiffy
1 egg
1/2 cup of milk (or buttermilk)
3 tablespoons of butter
1 small jalapeno chopped
3 small bunches of green onions (optional)
2 cups of shredded cheddar cheese
For soup, soak beans overnight and rinse, mix beans, in with 6-8 cups of chicken broth and mix in sausage, peppers, onion, minced garlic, bay leaves, and seasonings and cook on low to medium simmer for 1 hour or so. Stir beans and mash beans against the side of the pot to get the creamy texture in the soup.
Bake cornbread mix on 400 degrees for 20-25 minutes or when golden brown and cooked all the way through.
Serve over white or brown rice. If you're using brown rice I would cook that in chicken broth too.

This is a very easy and quick way to make butter beans
It very filling and comforting
You can actually use what ever beans you desire and like in this recipe
RECIPE:
1# salt jowl bacon
1cup large diced celery
1cup large diced onions
2 tbs chopped garlic
1# white butter beans(Lima beans)
2 quarts chicken stock
salt and black pepper
Place beans,bacon,onions in instant pot and cover completely with chicken stock
Set instant pot on bean setting for 55 minutes
ENJOY WITH HOT SAUCE AND CORNBREAD
