How To make Lima Bean Health Loaf
1 c Dry Lima Beans
1 ea Small onion chopped
1/3 c Flour
1 ea Beaten egg
1 1/2 c Chopped carrots
1/4 t Black pepper
1 x American cheese slices
1/4 c Butter
1 c Thinly sliced celery
1 c Skim milk
1 c Soft wholewheat crumbs
1 t Salt
1/2 c Chopped peanuts
Soak beans over night in cold water.Drain, rinse, and cook in water to cover until tender, about 1 1/2 hours. Drain beans and mash. Melt butter in saucepan, add onion, saute 3 mins, add celery, cover, cook until tender. Stir in flour and cook 2 minutes. Add milk stirring until thickened. Remove from heat, stir in beaten egg,, add bread crumbs, carrots, salt, pepper and peanuts. Spoon mixture into a greased 8 x 4 inch loaf pan and bake at 375 degrees for 35 - 45 minutes. Arrange cheese slices on top, return to the oven until cheese melts. Serves 6. (from the L.A. Times California Cookbook)

Our butter bean mash on toast is creamy, it’s blended with roasted garlic and it pairs perfectly with cherry tomatoes. Enjoy!
Serves 4
???? 1 garlic bulb
???? 220g / 7.8oz cherry tomatoes
???? olive oil
???? salt + pepper
???? 2 x 400g / 14.1oz tins of butter beans, drained + rinsed
???? 1.5 lemon, juice only
???? 4 large slices of bread
???? fresh basil leaves
???? sesame seeds
Preheat the oven to 200°C fan / 425°F.
Slice 1/2 cm (1/4“) from the top of the garlic bulb to expose the cloves and add the bulb to a small tray along with the cherry tomatoes.
Drizzle a splash of olive oil over both the bulb and the tomatoes and season with salt and pepper. Cover the garlic bulb tightly with baking paper and add the tray to the oven. Roast for 30 minutes.
Carefully remove the bulb from the tray and leave it to cool for a few minutes, then squeeze out the cloves into a food processor, followed by the butter beans, lemon juice, 3 tablespoons of olive oil and generous pinches of salt and pepper.
Blend the butter beans into a mash. While it’s blending, drizzle in cold water until it reaches a smooth and creamy consistency.
Toast the bread. Then plate up by scooping the mash on top of the toast, followed by some roasted cherry tomatoes, fresh basil, a drizzle of olive oil, a pinch of pepper and a sprinkling of sesame seeds.
Store any leftover butter bean mash in an air-tight container in the fridge for 3-4 days.

PA DUTCH BAKED LIMA BEANS -- MAGICAL FRUIT CHALLENGE
Big baked lima beans in sauce is always a favorite. While they take time to make, they are always worth the effort! This was a half batch, so I will post the recipe for a full size one. Recipe below the Channels.

PA DUTCH LIMA BEANS
2 lbs dried lima beans
1 lb bacon, cut up
1 cup molasses
4 cups ketchup
1 C brown sugar
1 large onion, chopped
DIRECTIONS
Soak beans overnight. Make sure the pan with the beans has enough water to cover the beans plus at least an inch of water on the top.
Cook in water until just about half tender; drain.
Add other ingredients.
Bake in oven until tender, 2 to 3 hours at 350 degrees.
Always best if served the next day!
