How To make Cinnamon Oatmeal Muffins
3/4 c Skim or 2% milk
1 c Oatmeal, uncooked
1/2 c Vegetable oil
2 Egg whites
1/2 c Brown sugar
1/2 ts Cinnamon
3 ts Baking powder
1 c Flour
1 tb Grated orange zest
Peeled and chopped bits of apple, optional Preheat oven to 400 F. Line 12 muffin cups with paper liners. Combine and mix milk and oatmeal. Add oil and egg whites, sugar and spice and zest. Stir until blended. Combine flour and baking powder, add to mixture, along with apple bits and stir just until blended. Bake 15-18 minutes. Makes 12 muffins.

1 tsp baking soda (5 ml)
1/2 tsp salt (2.5 ml)
1 tsp cinnamon (5 ml)

2SP Cinnamon Oat Muffins
These regular-sized muffins are made with Kodiak Cakes cinnamon oat mix. Adding additional cinnamon and Sukrin brown sugar enhances the flavor without adding WW smartpoints. I recommend spraying your muffin tins instead of using papers as the muffins did not come out easily from the paper liners. My bad! I just made these on a whim and didn’t have to tweak my recipe because they were good right out of the gate. In the future, I will add Sukrin icing with a little cinnamon mixed in to top my muffins. BAKED APPLE OATMEAL CUPS RECIPE
3 cups old-fashioned rolled oats
1 teaspoon baking powder
1/2 teaspoon cinnamon
1 cup organic buttermilk (you can sub any milk you prefer)
2 eggs, beaten
1/2 cup applesauce (I used cinnamon applesauce)
1 large apple, chopped (1 heaping cup)
1/4 cup raisins
Preheat oven to 350ºF. Spray a 12-count muffin pan with non-stick cooking spray or coat with coconut oil and set aside.
In a large bowl combine oats, baking powder, cinnamon, buttermilk, eggs, and applesauce. Mix together until everything is well incorporated.
Add in chopped apple and raisins and gently toss until they are evenly distributed throughout the batter.
Divide batter amongst all 12 muffin cups and pop in the oven for 25-30 minutes or until they have set through and are golden brown on top.
Cool and enjoy.
*I like to store these in an airtight container and keep them in the fridge. They will last a good week stored this way.

Apple Oat Muffins
Ingredients
Apple - 1
Rolled Oats - 1 cup
All purpose flour - 1 cup
Sugar - 3/4 cup
Baking soda - 1/2 tsp
Baking powder - 1 tsp
Cooking oil - 100 ml
Milk - 1 cup
Cinnamon powder - 1 tsp
A little Sugar
A pinch of Salt
Method:
Mix the apple with sugar, salt and cinnamon powder.
In a wide bowl, add flour, sugar, baking soda, baking powder and oats. Mix them well.
To this, add milk and cooking oil. Gently mix everything together.
Add the apples to the oats batter and gently mix it untily you get a think consistency.
Line silicone uffin moulds with cupcake liner. Use an ice cream scooper and fill three quarters of the cup with the batter.
Meanwhile, preheat the oven at 180 degree centigrade.
Place the cups on a baking tray and bake it in the oven.
