Apple Cinnamon Muffins ???? Fluffy, Tender, and Totally IRRESISTIBLE!
If you like apples and cinnamon, this is the recipe for you! We're making Apple Muffins, not one, but two ways!

Apple Crumble Muffins:
Apple Cinnamon Muffins (with Cinnamon Sugar Topping):
We'll start with apple muffins with a crumble topping (also known as a streusel topping)! This topping comes together with an easy mix of flour, granulated sugar, brown sugar, butter, cinnamon, and salt.
The key to a great crumble topping is cold butter! This way the butter incorporates into the flour like it would in a pie crust, and results in a tender-crisp texture. It's completely delicious! You'll make this particular topping before making the apple muffin batter.
Here's how you make a cinnamon crumble for apple muffins:
1. Mix together flour, sugar, salt, and cinnamon.
2. Then, add the butter and cut it into the dry mixture until the mixture begins to resemble a texture similar to damp sand.
NOTE: In the video, I misspoke! I said you would add the sugar to the crumble topping using a teaspoon measure. This is wrong! You'll actually be using tablespoon measures for these ingredients. Just follow the printer-friendly recipe linked to above!
That's it! So easy. Now, on to the second topping -- Apple Muffins with Cinnamon-Sugar on top! These muffins are both so good, it will be hard to choose just one.
For Apple Muffins with a cinnamon sugar topping, you'll need granulated sugar, cinnamon, and salt. You'll make this topping after the apples have finished baking.
Here's how you make the cinnamon sugar topping:
1. In a small bowl with granulated sugar, cinnamon, and a pinch of salt.
2. Once the apples are baked, dip the top of each muffin in the butter and then roll it in the cinnamon-sugar mixture to generously coat the top.
Toppings are great and all, but what about that perfectly tender, fluffy, cinnamon-spiced Apple Muffin?! Time to talk batter!
This muffin batter comes together so easy. Here's what you'll need:
- Apples | The recommended apples for making Apple Cinnamon Muffins are Golden Delicious. They are a softer apple variety and perfect for baking recipes that don’t require a lot of time in the oven.
- Flour | Only use all-purpose flour for this recipe.
- Brown Sugar | This muffin batter recipe was developed using light brown sugar, but if you only have dark brown sugar on hand, feel free to use it here!
- Unsalted Butter | I always recommend using unsalted butter as it will give you complete control over your sodium levels and flavor.
- Baking Powder | Be sure not to confuse baking powder with baking soda! Only baking powder should be used for this Apple Cinnamon Muffin Recipe.
- Milk | Whole milk is best, but if you only have 2% milk, it can be used in this recipe.
- Salt
- Cinnamon
- Eggs
Now, here's how you make the best Apple Muffins from scratch!
1. Mix together flour, baking powder, salt, and cinnamon in a medium-sized mixing bowl.
2. Mix together brown sugar, eggs, milk, and vanilla in a large mixing bowl. Add the melted butter and mix again until well blended.
3. Add the dry ingredients to the wet ingredients and stir until just combined. Do not overmix the batter!
4. Toss peeled and diced apples with 2 tablespoons of flour and then fold them into the muffin batter.
5. Have ready a 12-cup muffin tin lined with muffin liners and spritzed with nonstick cooking spray. Fill the muffin cavities about two-thirds of the way full and bake the Apple Cinnamon Muffins at 425°F for about 15 minutes! Allow to cool slightly.
These muffins are perfect for celebrating the arrival of fall or really, during any season! The kids absolutely love them (and so do the adults). This recipe is perfect for Fall breakfast and brunches, Great afterschool snack.
They freeze very well so you can batch bake them and freeze for when you need them again.
Ingredients: Applesauce muffins
1 C Butter, softened

Makes 12 muffins
Ingredients:
For the muffins:
2 Apples
1 Egg, large
1/2 cup (120ml) Milk
1/3 cup (80ml) vegetable oil
1¼ cups (160g) Flour
2 teaspoons Baking powder
1/4 teaspoon Salt
3/4 cup (150g) Sugar
1 teaspoon Vanilla extract
For the crumble:
1/4 cup (60g) Butter, cold
1/2 cup (65g) Flour
1/2 cup (100g) brown Sugar
1 teaspoon Cinnamon
Directions:
1. Preheat oven to 350F (175C). Line a 12-cup muffin pan with muffins liners, spray the cups with oil (optional) and set aside.
2. Make the muffins: In a bowl mix milk, oil, egg and vanilla extract. Set aside.
3. In a separate bowl, combine flour, baking powder, sugar and salt.
4. Peel the apples and cut into small chunks. Place apple chunks into the flour mixture and toss well to ensure the apples are well coated.
5. Pour the wet mixture into the dry mixture and mix until combined.
6. Scoop the batter into muffin cups until 3/4 full.
7. Make the crumble: Combine the ingredients for the crumble topping together in a small bowl and crumble together using your finger tips.
8. Sprinkle some crumble on top of each muffin batter. Bake for 20-25 minutes, until a toothpick inserted into the center comes out clean.
9. Let cool before serving.

Apples are so great in baked desserts, they're naturally sweetened and you can use applesauce as a substitute for oil or butter.
These healthy apple muffins are allergy free, so kids can take them to school in their lunchboxes.

APPLE PIE MUFFIN RECIPE
Ingredients:
For muffins:
3 cups ground oats (300g)
2 teaspoons ground cinnamon
1/2 cup Greek yogurt (145g)
1/2 cup honey (170g)
1/2 cup applesauce (130g)
2 large eggs
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon baking soda
1 cup grated apple (150g)
1 cup diced apple (120g)
For the crumble:
2 tbsp ground oats
2 tbsp quick oats
1 tbsp coconut oil
1 tsp honey
1/4 tsp ground cinnamon
Preparation:
In a bowl, combine dry ingredients first, ground oats, ground cinnamon, baking powder, baking soda and salt.
In another bowl, combine wet ingredients eggs, honey, Greek yogurt and applesauce.
Mix dry and wet ingredients together to combine. Do not over mix the batter.
Add the apples and gently fold in.
Grease the muffin pan with some olive oil or melted coconut oil.
Spoon the batter into the muffin holes, and spinkle the crumble.
Bake at 425F (220C) degrees for 5 minutes, then lower the heat at 375F (190C) degrees and bake for another 15-20 minutes.
Let it cool in the pan for 10 minutes, then transfer to the wire rack and let cool completely.
