2 1/2 c flour
1 1/2 c sugar
1 c pecans
chopped
1/2 c oatmeal, quick :
uncooked
1 tbsp baking powder
1 tsp salt
1 tsp cinnamon
4 eggs
1 med zucchini -- shredded
3/4 c oil
Grease 12 3 inch muffin pan cups. Preheat oven to 400?. In large bowl, measure first 7 ingredients. In med. bowl, beat eggs, stir in zucchini and oil. Stir mixture all at once into flour mixture just until flour is moistened. Spoon lumpy batter into muffin cups. Bake 25 min. or until toothpick trick works.

½ cup (120 grams) milk, we use almond milk
¼ cup (55 grams) olive oil or another vegetable oil
⅔ cup (130 grams) sugar
1 tablespoon (15 grams) vanilla extract
2 medium (260 grams) zucchini about 10 ounces or 2 heaping cups, grated
DRY INGREDIENTS
2 cups (300 grams) all-purpose flour
2 teaspoons (8 grams) baking powder
1 teaspoon (4 grams) baking soda
¼ teaspoon (1.5 grams) salt
1 teaspoon (5 grams) cinnamon optional

►INGREDIENTS:
2 large eggs
1/2 cup applesauce or yogurt
1/2 cup honey or maple syrup
1/4 cup any mild tasting oil
1 tsp pure vanilla extract
1 tsp cinnamon
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
2 cups whole wheat flour or spelt flour
2 cups shredded zucchini, not squeezed and packed
1/2 cup walnuts, optional

►DIRECTIONS:
1. Preheat oven to 375 degrees F and spray non-stick 12 muffin tin with cooking spray. Set aside.
2. In a large mixing bowl add eggs, applesauce, maple syrup, oil, vanilla extract, cinnamon, baking powder, baking soda and salt; whisk well to combine.
3. Add flour and gently mix until combined. Add zucchini and nuts (if using). Stir and do not over mix.
4. Distribute batter evenly between 12 openings of a tin (I used regular ice cream scoop) and bake for 20 minutes or until a toothpick inserted in the center comes out clean.
5. Let muffins cool for a few minutes and transfer to a cooling rack to cool off completely.

1 Zucchini
1/4 of red pepper
200g (1 cup) Grated cheese
2 Eggs
4g (1 tsp) Salt
4g (1 tsp) Pepper
125g (1 cup) Flour
5g (1 tsp) Baking powder
METHOD
In a bowl put two eggs, add salt and pepper and whisk it.
Grate the zucchini and put it into the bowl. Add chopped red pepper and grated cheese. Mix it and add flour and baking powder. Mix it well and add it to a muffin pan.
Bake at 180C for 25 minutes. Serve.

1 cup shredded zucchini
6 tbsp melted butter(or any oil you prefer)
1/2 cup maple syrup (or any syrup you prefer)
1 tsp vanilla
1 cup oats
2 cups all purpose flour
1 tsp salt
1 tsp baking soda
2 tsp ground cinamon
1/4 tsp nutmeg
1/2 cup raisins
1/2 cup nuts (any nuts you prefer)
1/2 cup chocolate chips
Bake for 18 to 20 mins at 180c
