How To make Cherry Oatmeal Muffins
2 1/4 c Flour -- all-purpose
4 1/2 oz Quick oats
2 tb Orange peel
grated
1 tb Baking powder
1 lb + 2 oz pitted sour cherries
. canned, drained 3/4 c Frozen orange juice
. concentrate :
thawed 1/4 c Vegetable oil
1 lg Egg lightly beaten
2 ts Vanilla extract
2 ts Brown sugar :
packed
1. Preheat oven to 400?F. Spray twelve 2 3/4" muffin
cups with nonstick cooking spray. 2. In large bowl, with fork, combine flour, oats, peel
and baking powder. Add cherries and toss. In small bowl, combine 1 cup water, the juice, oil, egg and vanilla. Add liquid ingredients to dry; mix with a fork until just combined. Do not overmix. 3. Spoon batter evenly into prepared cups; sprinkle
tops evenly with sugar. Bake 12 - 15 minutes, or until toothpick inserted in center comes out clean. Remove from pan; place on rack to cool. Each serving provides: 1 FA, 1 1/2 B, 1 FR, 10 C. Per serving: 228 cal, 6g pro, 6g fat, 38g car, 117mg sod, 18mg chol.
Night Before: Bake muffins. Refrigerate or freeze in sealable plastic bags.

Great taste from simple ingredients! Light dessert for breakfast in 5 minutes! The recipe is simple and quick, but very tasty. Easy dessert recipe in 5 minutes. All I can say is that it was over very quickly, and I will definitely do it again soon.
Ingredients:
130 g oat flakes(gluten free) (1 1/2 cup)
240 ml hot water (1 cup)
leave to soak for 5 minutes
2 eggs
30 g(2 1/2 tbsp) sweetener(stevia/or your choice)
1 tsp vanilla extract
120 g yogurt (1/2 cup)
50 g melted and cooled butter(1/4 cup)
1 apple
80 g blueberries (2.5 oz)
7 g baking powder (1/2 tbsp)
20 x 8 cm baking form(7.9 x 3.1 inch)
bake for 50 minutes at 180°C/ 360°F

TART CHERRY + CHOCOLATE BAKED OATMEAL CUPS RECIPE
3 cups rolled oats
1/4 cup monk fruit* (or preferred sweetener)
1 teaspoon baking powder
1/2 teaspoon cinnamon
1/2 teaspoon sea salt
2 tablespoon chia seeds
1 3/4 cup unsweetened almond milk
1 cup frozen tart Montmorency cherries, sliced in half
1/3 cup chocolate chips*
Preheat over to 350º F. Line a 12-cup muffin pan with muffin liners and lightly spray each liner so the muffins don't stick.
In a large bowl, combine rolled oats, monk fruit, baking powder, cinnamon, salt and chia seeds. Gently toss.
Add in almond milk and mix until well combined. Rest for 5-10 minutes to allow the oats and chia seeds to absorb the milk. The batter will be thick and hearty.
Toss in the tart cherries and chocolate chips. Stir to combine.
Divide batter evenly amongst muffin cups and bake for 25 minutes or until the oatmeal cups are fragrant, set through and lightly browned.
Cool completely and enjoy!
NOTES
Chia seed substitutions: 2 Tablespoons of ground flax seeds or 2 eggs or 1/3 cup egg whites (Note: you may reduce the milk by 1/4 cup if using eggs or egg whites).
Monk fruit substitutions: Sub any granulated sugar you prefer or sub in 1/4 cup maple syrup or honey.
Storage: Store baked oatmeal cups in a sealed, air-tight container in the fridge (up to 7 days) or freezer (up to 3 months).
Oatmeal tips: You can use rolled or quick oats for this recipe. I do not recommend using steel-cut oats because they will not soften.
