How To make Cherry Oatmeal Muffins
2 1/4 c Flour -- all-purpose
4 1/2 oz Quick oats
2 tb Orange peel
grated
1 tb Baking powder
1 lb + 2 oz pitted sour cherries
. canned, drained 3/4 c Frozen orange juice
. concentrate :
thawed 1/4 c Vegetable oil
1 lg Egg lightly beaten
2 ts Vanilla extract
2 ts Brown sugar :

1. Preheat oven to 400?F. Spray twelve 2 3/4" muffin
cups with nonstick cooking spray. 2. In large bowl, with fork, combine flour, oats, peel
and baking powder. Add cherries and toss. In small bowl, combine 1 cup water, the juice, oil, egg and vanilla. Add liquid ingredients to dry; mix with a fork until just combined. Do not overmix. 3. Spoon batter evenly into prepared cups; sprinkle
tops evenly with sugar. Bake 12 - 15 minutes, or until toothpick inserted in center comes out clean. Remove from pan; place on rack to cool. Each serving provides: 1 FA, 1 1/2 B, 1 FR, 10 C. Per serving: 228 cal, 6g pro, 6g fat, 38g car, 117mg sod, 18mg chol.
Night Before: Bake muffins. Refrigerate or freeze in sealable plastic bags.

Today we are making healthy cherry oatmeal muffins. They are lactose free (normal version is great as well), with oats and wholewheat flour. In our family those muffins didn't last long! For oatmeal topping:
- 1 cup old fashioned rolled oats
- 4 tablespoons coconut oil, (or butter) solid and room temperature
- 2 tablespoons all-purpose flour
- 2 tablespoon granulated sugar
For the dough:
- 2 cups old fashioned rolled oats
- ⅔ cup all-purpose flour
- ½ cup whole wheat flour
- ¼ cup brown sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- ½ teaspoon salt
- 1.5 cups Coconut milk (or normal)
- 2 Tbsp honey
- ¼ cup coconut oil, (or butter) melted and room temperature
- 2 eggs
- 2 cups of fresh cherries, pitted and chopped
Let’s make the topping first. Combine 1 cup of rolled oats, 2 Tbsp Sugar, 2 Tbsp flour, 4 Tbsp coconut oil (or butter). Rub it all together with fingers and refrigerate.
Now let’s make muffins dough. Combine dry ingredients first: 2 cups of rolled oats, 2/3 cup of flour, ½ cup of whole wheat flour, ¼ cup brown sugar, 1 teaspoon baking powder, 1 teaspoon baking soda, 1 tsp cinnamon, ½ tsp salt, mix well.
Separately, mix 1.5 cups coconut milk (or normal milk), 2 eggs, 2 Tbsp of honey, ¼ cup of melted coconut oil (or butter). Mix well and combine wet and dry ingredients until dough is ready. 2 cups of pitted cherries chop roughly and mix into the dough. Grease muffin moulds with coconut oil or butter. Fill up the moulds almost to the top to get a nice muffin tops. Crumble the topping and sprinkle on top of the muffins.
Bake the muffins into preheated to 400°F (200°C) oven for 20 minutes, or until a wooden skewer inserted in the center comes out with fine crumbs (not batter). Allow to cool for 10 minutes in the muffin pan before serving. Tender, juicy, very tasty! Bon appetite!

1 cup organic frozen cherries thawed
2 very ripe bananas
1 1 2/ cups roasted Hannah Yams
4 cups rolled oats
1 Tablespoon ground flax meal
1 Tablespoon or more Pumpkin Pie Spice
1 1/2 cups frozen organic wild blueberries - kept frozen
350 degrees 50-55 minutes
