How To make Banana Nut Oatmeal Muffins

8 oz can walnuts-coarsely crushed
2 c oats
3 c flour
1 TB baking powder
2 ts baking soda
1 ts salt
4 ripe bananas
1 c milk
1 c honey
4 TB melted butter
1 egg
In a small bowl, mix 1/2 cup chopped walnuts and 2 tablespoons oats, set aside. In a large bowl, mix remaining nuts, oats, flour, baking powder, baking soda, and salt. In another bowl, mash bandannas (you should have 2 cups). Beat in milk, honey, melted butter, and egg until well blended. Stir in banana mixture into flour, mix until just moistened. Spoon into muffin cups. Sprinkle with reserved walnut-oat mixture. Bake 25 to 30 minutes. Immediatly remove from pans. Makes 12 muffins. Ingredients:
3¼ cups (350g) rolled oats
½ cup honey/maple syrup/date syrup (170g)
2 tsp baking powder
2 eggs
1 cup mushed bananas (about 3 large bananas)
1 cup milk
1 tsp vanilla extract
½ tsp salt
Dark chocolate chips for topping (optional)
Directions:
1.Preheat oven to 360f/180c
2.In a large bowl mash bananas, add eggs, milk, honey and vanilla extract. Whisk all together.
3.In another bowl add rolled oats, baking powder and salt. Mix well.
4.Combine together wet and dry ingredients, mix just until combined.
5.Put paper muffin cups into muffin tin (optional) and spry the paper muffin cups with cooking oil.
6.Divide the batter evenly between the muffin cups, top with chocolate chips.
7.Bake for 25-30 minutes until muffins are just golden brown.
8.Place the muffins on a cooling rack to cool for 15 minutes.

-1 Cup /120G AP Flour
-3/4 Tsp Baking Powder
-1/4 Tsp Baking Soda
-1/4 Tsp Salt
Wet
-1-2 Ripe Bananas (100G-200G)
-2 Tbsp / 30mL Vegetable Oil
-2Tbsp / 30G Melted Unsalted Butter
-1/4 Cup / 50G Brown Sugar
-1/4 Cup / 50G Sugar
-2 Tbsp / 30mL Buttermilk (Room Temperature)
-1/2 Tbsp Vanilla Extract
-1 Large Egg
Topping
-2 Tbsp / 25G Sugar
Bake 425F / 218C for 8 mins then reduce heat to 350F / 175C for 6-8 Mins or golden brown.
