CAKE FOR PASSOVER :
APPLE LAYER-------------------------------- 5 lg Apples ; sliced thin
1/4 c Sugar
1 ts Cinnamon
6 Dried Apricot halves ;
-;coarsely minced CAKE:
3 Eggs ;separated
3/4 c Sugar
2 ts Vanilla
2 ts Lemon zest ;grated fine
3/4 c Matzoh Cake Meal
1/3 c Oil
pn Salt TOPPING:
1/3 c Walnuts ;finely chopped
1/2 Sugar
2 ts Cinnamon
1. Toss apples with sugar and cinnamon. Set apples and
apricots aside. 2. Om bowl, combine egg yolks, sugar, vanilla, lemon
zest, matzoh meal and oil. Blend until smooth. In a separate bowl, whip the egg whites with pinch of salt until stiff and glossy. Loosen batter with generous dollop of egg whites, then fold remaining egg whites into batter. 3. Spoon half of abatter into greased 9 inch
springform pan. Arrange apples on top. Dot with minced apricot and cover with remaining batter. Batter will be thick and sticky; don't worry about spreading it evenly. 4. Combine topping ingredients and sprinkle over cake
batter. Bake 50 to 55 minutes at 350 degrees. Makes 8 to 10 portions.

*** The recipe: (baking pan size: 20cm / 8 inches)
2 / eggs
65g / granulated sugar (4+1/2 tablespoons)
8g / vanilla sugar ( 1/2 tablespoon)
A pinch of salt
Mix well
100ml / milk (1/2cup - 1 tablespoons )
40ml / vegetable oil ( 3 tablespoons)
80g / all-purpose flour (1/2 cup)
10g / baking powder ( 1,5 tablespoons)
Mix well
1 teaspoon / orange zest
3-4 / sweet apples
Pour into the batter and mix well!
Bake in the preheated oven at 180 ° C / (356 ° F) for 50-55 minutes!

1 c : Dark Raisins Soaked In:
Grated Zest and Juice of 2
5 : Extra Large Egg Whites
2 tb : Canola Oil
1/2 c : Egg Substitute
1 : Firm Pear; Peeled
2 : Apples; Peeled and Shredded
8 oz : Crushed Pineapple in Natural
2 tb : Sugar
2 ts : Vanilla Extract; Can Omit
5 : Sheets Matzo; Crumbled,
1 ts : Ground Cinnamon
1/2 c : Passover Wine
1/2 c : Sugar- Free Apricot

LASAGNA
I don't have an exact recipe for this one. It's more of a feel it out type dish.
Ingredients
For Filling:
Red potatoes
Onions
Fresh garlic
Veggies of your choice (I used broccolini, Italian parsley and frozen kale)
Cheese of your choice (I used vegan cheese and homemade ricotta)
Sauce
Matzo
1. Thinly slice potatoes and onions and sauté with fresh garlic. Let the onions get started first and then add the potatoes.
2. Chop additional veggies and add to sauté.
3. While veggies are sautéing, prepare cheese by mixing ricotta with chopped kale or spinach.
4. Assemble lasagna. Start with a layer of sauce on the bottom. Use matzo for your second layer. Add filling and another layer of matzo. For your top layer, use matzo with sauce and cheese on top.
5. Cook covered for 50 minutes at 425. Then uncover and leave in until the top gets nice and gooey.
HERBED RICOTTA
Ingredients
1.5 cups raw macadamia nuts, soaked in a bowl of water for at least 4 hours
1/8 teaspoon garlic, minced
1/2 teaspoon salt
1 tablespoon olive oil
1. Puree all ingredients in a food processor for 1 minute.
2. Scrape down the sides and puree for another minute, until light and fluffy.
MATZO BALL TZIMMES
Ingredients
Matzo balls (prepare these beforehand using Manischewitz Matzo Ball mix. The instructions are on the box!)
Your choice of root veggies (I used beets and carrots)
Fresh mint for garnish, optional
For Sauce:
3 cups apple juice
6 oz of dried apricots
1/2 a cinnamon stick
1/3 cup apricot preserves
1. Chop root veggies and apricots.
2. Prepare sauce. Warm apple juice in a pot on the stovetop. Add preserves, cinnamon stick and chopped apricots. Let sauce simmer and thicken.
3. Sauté root vegetables and matzo balls in vegan margarine over medium-low heat.
4. Toss matzo balls and veggies with sauce.
5. Add fresh mint as a garnish!

How to Make Jewish Strudel
Ingredients:
Pastry:
1.5 cup all-purpose flour
1.5 tsp baking powder
1/2 cup butter
2/3 cup sour cream
Filling:
1 cup chopped walnuts and/or almonds
1/2 cup raisins
1/4 cup sugar
1 tbs honey
1 tbs lemon rind
Spread - apricot or other tart tab
Glaze:
1 egg yolk and 1 tsp water
Bake Time:
400F 10 minutes + 300F 30 minutes
