How To make Banana Passover Sponge Cake
7 Eggs
1 c Sugar
3/4 c Cake Meal
1/2 ts Salt
1/4 c Potato Starch
1 c Chopped Walnuts
1 c Mashed Bananas (2 ripe)
1/2 ts Vanilla
Beat yolks with sugar until creamy. Add themashed bananas, beat well. Whip egg whites until stiff (in different bowl). Add cake meal, potato starch and salt to yolk mixture. Fold in egg whites into this mixture. Add flavoring fold in gently. Bake at 325 F. for an hour
more or less:
. Use an angle food cake pan. Cool upside down for about 30 minutes or until cooled. Cut in half with knife. Ice with real whipped cream or cool whip. Top with bananas and a few walnuts.

Tip
Combine 1/3 cup of granulated sugar with a 1/2 teaspoon potato starch and blend them together in a food processor or coffee grinder to make kosher for Passover powdered sugar.
Step 4: Count on chocolate
Count on dark chocolate to save the day! Bake a delicious flourless chocolate cake, or make brownies using matzo meal or cake meal.
Tip
Turn plain matzo into delectable crunch bars with the addition of dark chocolate and caramel.
Step 5: Use egg whites
Make goodies that attain height and airiness from beaten egg whites rather than leavening agents, like a sponge cake, meringues, or macaroons.
Step 6: Focus on fruit
Focus on fruit-based desserts, like sorbets, honey-drizzled fruit with walnuts, or fruit compote.

Banana Coffee Cake ~ Gluten Free with Streusel Topping
1/2 cup butter
1 cup white sugar
1 tsp Vanilla
2 eggs
2 ripe bananas, mashed
1 1/4 cups Gluten Free flour ~ I used Bob's Red Mill Gluten Free 1-to-1 Baking Flour (If your not Gluten Free use Regular All Purpose Flour)
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon Cinnamon
Preheat oven to 350 degree
Grease or Spray a 9-inch square baking dish
Beat butter, sugar and vanilla with an electric mixer until light and fluffy. Scrape the bowl.
Beat in eggs one at a time, allowing each egg to blend into the butter mixture before adding the next. Scrape the Bowl.
Mash the Bananas on a plate with a Fork or Potato Masher
Add bananas into butter mixture. Lightly Mix.
In a medium bowl whisk together
Flour, Baking Soda, Salt and Cinnamon.
Slowly add the flour mixture into banana mixture until blended. Do not over beat.
Pour batter into prepared baking dish.
Top with Streusel Topping:
In a small bowl use a fork to mix together
½ Cup Gluten Free Flour
½ Cup Brown Sugar
½ Cup Chopped Pecans and Walnuts
2 tsp Cinnamon
¼ Cup Melted Butter
Sprinkle/Crumble over the cake
Bake for 45 Minutes
or until internal temperature 205* using a digital thermometer
or a toothpick comes out clean.

Banana Cake
Ingredients:
3 mashed ripe bananas
1.5 cups sugar
4 eggs
1 cup veg. oil
1 tsp vanilla extract
3 cups flour
1 tsp baking powder
1 tsp baking soda
1 tsp salt
1 cup semi sweet chocolate chips
Directions:
In a mixing bowl, beat bananas, sugar, eggs and oil. Combine the dry ingredients; stir into banana mixture. Fold in chocolate chips. Pour into loaf pan or bunt cake pan. Bake at 350 F for 55 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to wire rack.
