How To make Chocolate and Sour Cream Muffins
5 ounces semisweet chocolate
2 baking chocolate squares
1/3 cup margarine
3/4 cup sour cream
2/3 cup packed brown sugar
1/4 cup corn syrup
1 egg
2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup chocolate chips
1. Mix semisweet chocolate, baking chocolate, and margarine together;
melt carefully in microwave or over simmering water in double boiler. Allow to cool to lukewarm. 2. Mix sour cream, sugar, corn syrup, egg and vanilla. Blend with
melted chocolates. 3. Blend flour, soda and salt; add the chocolate mixture and blend
very well. Add the chocolate chips. 4. Pour batter into 12 paper-lined or greased muffin tins. Bake in
preheated 400-degree oven for about 20 minutes. Remove from muffin tins and allow to cool on wire racks.

If you want a quick, easy delicious snack, this is the recipe for you! You can't tell sour cream is an ingredient in these, but the chocolate chips and pecans make them so flavorful!
Sour Cream Muffins
Ingredients:
1/2 cup butter, softened
1/2 cup brown sugar
1/2 cup sugar
2 eggs
1 teaspoon vanilla
1/2 cup sour cream
1/2 cup milk
2 1/8 cup flour
1 tablespoon baking powder
1 cup chocolate chips
1 cup nuts, chopped
Directions:
Cream together butter and sugars.
Beat in eggs until blended.
Add vanilla, sour cream and milk and mix well.
Add flour and baking powder and mix well.
Fold in chocolate chips and nuts.
Spoon batter into lined muffin cups or spray with non-stick spray until 3/4 full.
Bake at 400ºF for 20 minutes.
Makes 18 - 20 muffins.

1/4 cup sugar replacement (or you can use 1/3 cup honey, or 1/2 cup sugar)
1 1/2 tsp baking powder
1/2 tsp cinnamon
2 eggs
1/2 cup milk (I used 1% cow’s milk, any other should work fine)
1/2 cup sour cream (reduced fat)
1/4 cup margarine or butter
Vanilla stevia drops (or vanilla extract, 1 tsp)
Chocolate chips as desired (other mix ins: nuts and seeds, berries)
Directions:Lightly beat your 2 eggsCombine all of your ingredients in a mixing bowl
Lightly grease a muffin tray with non-stick oil
Spoon the mixture into the muffin cups
Bake at 375°F for 20-25m, or until the muffins are slightly golden on top
