How To make Cappuccino Cream Muffins with Chocolate Ripple
CHOCOLATE RIPPLE: 1/4 c all-purpose flour
2 tbsp brown sugar
lightly packed
1 tsp cinnamon
2 tbsp butter or margarine
2 squares semisweet chocolate :
chopped
BATTER: 2 tbsp instant coffee granules
1/2 c hot water
2 1/2 c all-purpose flour
1/2 c sugar
1 tbsp baking powder
1 tsp cinnamon
1/2 tsp salt
2 eggs
1 c sour cream
1/3 c butter or margarine melted
1 square semisweet chocolate :
melted, optional
Grease muffin cups or line with paper baking cups.
Chocolate Ripple: Mix flour, sugar and cinnamon in a small bowl. Cut in butter until mixture resembles fine crumbs. Stir in chopped chocolate. Set aside.
Batter: Dissolve coffee in hot water, cool. Mix flour, sugar, baking powder, cinnamon and salt in a large bowl. Beat eggs, sour cream, melted butter and coffee together with a whisk or fork. Stir liquid into dry ingredients, stirring just until moistened. Batter will be stiff. Spoon half the batter into muffin cups. Spoon a heaping tbsp of ripple mixture on top. Top with remaining batter. Bake at 400 F for 20 - 25 minutes or till firm to the touch. Cool in pan 5 minutes, remove muffins and cool on a rack. If desired, drizzle melted chocolate over top of muffins.

Plant Based Milk - DIY Almond Milk & Oat Milk
Going plant based is all the rage right now but part of the challenge of a plant based diet is finding substitute for dairy! Fortunately there are a lot of options these days. One of my favorite brands is Ripple - here are a few of their products. Also, I want to share with you 2 simple recipes that you can make in your Vitamix - Almond Milk & Oat milk. Easy peasy!
Recipes from this episode:
Special Equipment Needed:
Vitamix (or other high-powered blender)
Ellie's Best Nutmilk Bag (find on Amazon or elliesbest.com)
Pitcher
Mason Jar or other storage container
Almond Milk:
50 Raw Almonds, soaked overnight, drained & rinsed
1 Heaping TBSP Organic Coconut Oil
1 Pinch of Sea Salt
4 C Water
Soak your almonds the night before - 8 hrs or so. (Or you can cut the time in 1/2 by pouring boiling water to cover & let sit for 4 hrs)
Add all ingredients to your vitamix container. Always start on low & ramp up to highest setting. Let it run for 5 min. Meanwhile, fit nutmilk bag over pitcher so the top of the bag folds over the rim of the pitcher. After the 5 min, pour the milk through the bag into the pitcher. Careful - it'll be super hot. When it's cool enough to handle, squeeze all the liquid out. Pour into mason jar & store in fridge. Dont' forget to give it a shake before using as it naturally separates as it cools.

Oat Millk Recipe:
1 C organic rolled oats
1 pinch of sea salt
4 C Water (you can always add more water if you want a thinner consistency)
About 5-10 min prior to making your milk, pour boiling water over oats just to cover, this will help them plump up a bit (you could soak them but I don't think it's necessary)
Add oats, salt & water to vitamix container & run for 1 min (always start low & ramp up to highest speed). Strain in nutmilk bag over pitcher & make sure to squeeze out all the liquid. This will take just a bit more work than the almond milk but you don't want to miss all the creamy goodness - lol. Transfer to mason jar & Enjoy!

Today I am going to share very simple cupcake recipe.The ingredients are
Flour 1cup
Powdered sugar 3/4cup
Eggs 2
Baking powder 2tsp
Salt 1/4tsp
Oil 1/2cup
Raspberry flavouring essence 1 tsp
Food colour pink few drops
Buttermilk 1/4cup
Bake cupcakes for 12 to 15 minutes on 180c°.
