These little bundles of YUM are so, so easy and quick to make. Not to mention incredibly tasty, tender, moist and melt-in-your-mouth good. A recipe my mom made for years that she got from the Virginia Junior League (probably from a friend since we're from Seattle!). Here's what you need to know...
Sour Cream & Dill Muffins (Makes 24 mini muffins)
2 cups all purpose baking mix (like Bisquick for example) 4 T melted butter 1 cup light sour cream 1 tsp dried dill
Mix all ingredients together and drop evenly into mini muffin tins (or drop directly only a baking sheet or in regular sized muffin tins). Bake at 400 degrees for 9-10 minutes. Bake 2-3 more minutes if you make larger sized muffins.
These are delicious on their own but they pair great with soups, salads, or even eggs in the morning. So easy and so quick!!! A Win-Win!
Sour Cream Muffins with Chocolate Chips and Pecans
If you want a quick, easy delicious snack, this is the recipe for you! You can't tell sour cream is an ingredient in these, but the chocolate chips and pecans make them so flavorful!
Sour Cream Muffins
Ingredients: 1/2 cup butter, softened 1/2 cup brown sugar 1/2 cup sugar 2 eggs 1 teaspoon vanilla 1/2 cup sour cream 1/2 cup milk 2 1/8 cup flour 1 tablespoon baking powder 1 cup chocolate chips 1 cup nuts, chopped
Directions: Cream together butter and sugars. Beat in eggs until blended. Add vanilla, sour cream and milk and mix well. Add flour and baking powder and mix well. Fold in chocolate chips and nuts. Spoon batter into lined muffin cups or spray with non-stick spray until 3/4 full. Bake at 400ºF for 20 minutes. Makes 18 - 20 muffins.

Purchase Collard Valley Cooks Cookbooks: Sour Cream Biscuits (New Recipe- not in our cookbooks) 2 CUPS SELF-RISING WHITE LILY FLOUR 16 OZ. SOUR CREAM 1/2 CUP (1 STICK) SALTED BUTTER (ROOM TEMP) Combine flour with butter with a blending fork until butter is about pea size. Add sour cream and mix until all flour is incorporated into dough. Using a sifter, sift self-rising flour out onto counter. Put dough out on counter and fold dough at least 10-12 times add flour as needed to incorporate a little more flour into dough. Cut biscuits out with a biscuit cutter and place close together in a well-greased (with shortening) brownie pan. Pan size: 9x9 or 7x11 Alum. Baking pan Bake: 450 degrees until golden brown (about 15- 20 minutes) These biscuits are very soft and delicious. They taste a lot like a buttermilk biscuit without having to use buttermilk.
