1/4 c Butter
1 1/4 c Chocolate wafer crumbs or:
Chocolate graham wafer crumb 2 tb Sugar
granulated
2 oz Chocolate :
semisweet
12 oz Cream cheese softened
1/2 c Sugar :
granulated
3 Eggs
1 c Sour Cream
1 t Vanilla
In 9" microwavable quiche dish, round baking dish or deep pie plate, melt butter on high for 1 to 1 1/2 minutes. Stir in crumbs and 2 Tbsp sugar till evenly coated with butter. Press onto bottom and sides of pan. Microwave at High for 2-3 minutes or till firm. Rotate dish if necessary. In small dish, melt chocolate at Medium (50%) for 2-3 minutes, stirring to help chocolate melt. Set aside. In large bowl, beat cream cheese and sugar till light. Beat in eggs, one at a time, then add sour cream and vanilla and beat till smooth. Pour into baked crust. Drizzle chocolate over mixture in attractive pattern. Microwave, uncovered at Medium (50%) for 14 to 18 minutes, or till cheesecake is almost set in the centre. Rotate dish during cooking, if necessary. Eggless Vanilla Cake without Milkmaid, Curd, Butter Essence
Ingredients,
oil - 1/4cup (60ml) (used sunflower oil)
Powdered sugar - 1/2cup (50gm)
Hung curd - 1/2cup (125ml) (should be in room temperature)
All purpose flour - 3/4cup + 2tbs (104gms)
cocoa powder - 2tbs (16gms)
baking powder - 1/2tsp (3gms)
baking soda - 1/4tsp (1.5gms)
salt - 1/8tsp (a pinch)
instant coffee powder - 1tsp (4gms) (optional)
warm milk - 2tbs(30ml) (use as required more or less)
Used 4inch cake tin,
(grease with oil, line with parchment paper and dust with cocoa powder)
To Bake on stove top,
Preheat the vessel for 10mins on medium high flame,
Bake for10min on medium flame and 20mins on low flame
For convection Bake at 180c for 20mins
For the filling
Peanut butter - 2tbs
Chopped roasted almonds and chocochips
Sea salt - a pinch
For chocolate ganache
fresh cream - 1/4cup (used Amul cream)
dark chocolate - 3/4cup
(used 1/2cup Morde dark compound and 1/4cup Amul dark chocolate)
For syrup to soak
Black coffee - 3tbs
powdered sugar - 2tsp
For chocolate sauce
Some chocolate ganache
Some fresh cream
Soft butter - 1/2tsp
Black gel colour - 2 drops(optional)
Microwave for 10sec to get flowing consistency
Used 8 inch cake board and gold edible sprinkles of different sizes to decorate the cake.

• 2 cup white chocolate
• ½ cup dark chocolate
• 3 tbsp beetroot juice
• 1 cup condensed milk

• 1cup cream cheese
• ¼ cup powder sugar
• 1 cup whipping cream

1. Heat diced white chocolate, dark chocolate, condensed milk at 100% micro power level for 3 mins till the chocolate melts completely. Now add the beetroot juice and mix well. Line square baking tin with butter paper.
2. Pour this mixture in a lined tin, let this set for 3-4 hours.
3. Cut into 6 cm x 6 cm small squares.

1. Beat cream cheese and powder sugar, now add whipping cream into a glass bowl and beat this till it reaches a stiff pick, combine both mixtures and transfer in a piping bag with star nozzle, a pipe out rosettes on each fudge piece.
