Turtle Cheesecake Minis! w/recipe MUST SEE!!
Turtle Cheesecake Minis recipe:
Makes 24 mini cheesecakes!
Crust:
1 1/2 cups graham cracker crumbs
1/4 cup sugar
1 stick butter
Cheesecake filling:
3 8oz blocks cream cheese, softened
3 eggs, room temperature
1 1/2 tsp vanilla extra
3/4 cups sugar
Toppings:
Caramel topping
Pecans, chopped
Chocolate chips or Chocolate ganash
Directions:
Preheat oven to 350°
Crust: In a bowl mix the graham cracker crumbs and sugar, then add butter and stir well. Place cupcake liners into a cupcake pan. Add about 1 tbsp of crust mixture into each liner. Using a spoon or 1/4 cup flat bottomed measuring scoop, condense crumbled crust tightly into the bottom of each liner. Bake for 5 minutes.
Cheesecake filling: In a large mixing bowl add softened cream cheese, eggs, vanilla extract, and sugar then mix until very smooth with a hand or stand mixer. Scoop a small amount of filling into each cupcake liner. Smooth top with a spoon or small spatula. Add a small amount of caramel sauce on top of filling for each mini cheesecake, then swirl the caramel just slightly. Add a small amount of pecans to the top of each mini cheesecake. Bake 15-17 minutes, until cheesecake is fully cooked and the center is no longer jiggly. Cool completely for a minimum of 4 hours then add chocolate ganash. These will always be best after they chill and set fully for at least 24 hours before eating. Enjoy!
