How To make Chocolate Almond Zucchini Bread
3 Eggs; large
2 c Sugar
1 c Salad oil
2 oz Chocolate; unsweetened
1 ts Vanilla extract
2 c Zucchini; grated
3 c Flour; all-purpose
1 ts Salt
1 ts Cinnamon; ground
1/4 ts Baking powder
1 ts Baking soda
1 c Almonds; chopped
1-Beat eggs until lemon-colored. Beat in sugar and oil. Melt chocolate
over hot water and stir into egg mixture along with vanilla and zucchini. 2-Sift flour with salt, cinnamon, baking powder and baking soda. stir into zucchini mixture; add almonds. Mix well. 3-Bake in two well-oiled 9x5-inch loaf pans in preheated 350 degree oven for one hour and twenty minutes or until done. Cool in pans 20 minutes and then turn out onto rack. INGREDIENTS
2 cups (260 g) all-purpose flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1 tsp coarse salt (1/2 tsp if using fine salt)
1 1/3 cup (265 g) light brown sugar (packed)
1 1/2 tsp ground cinnamon
2 cups (305 g) zucchini (grated)
1/2 cup walnuts or pecans (optional)
2 large eggs
1/2 cup (118 ml) cooking oil
1/2 cup (118 ml) milk
1 1/2 tsp vanilla extract
9 x 5 x2 loaf pan
Bake at 350ºF / 176ºC for 45 to 50 minutes or until a toothpick comes out clean
If using an 8 x 4 x 2 loaf pan bake for 55 to 60 minutes

Chocolate Zucchini Bread Recipe | The Frugal Chef
In this video I want to show you how easy it is to make a luscious, sinful and decadent moist chocolate zucchini bread with cocoa powder and chocolate chips. You will not believe how easy this bread is to make. An absolute winner.
My biggest recommendation for this recipe -- do not over mix the ingredients. Especially when you are mixing the dry with the wet. Simply make sure all the flour is mixed in and stop. This will keep it soft and moist.
1 1/2 cups of shredded zucchini is a medium zucchini. You do not need to peel it but wash it well. I shred mine by hand but you can also do it in a food processor. Enjoy this recipe guys! Please give it a thumbs up if you like it!

How to make chocolate zucchini bread -
1 cup (120 grams) all-purpose flour
1/2 cup (50 grams) unsweetened cocoa powder
1 teaspoon (5 grams) baking soda
1/2 teaspoon (3 grams) salt
1/2 cup (120 grams) vegetable oil
2 large eggs — room temperature
1 teaspoon (5 ml) vanilla extract
3/4 cups (150 grams) light brown sugar
1 1/2 cups (220 grams) shredded zucchini — about 1 medium zucchini
1/2 cup (80 grams) dark or semi-sweet chocolate chips
1/2 cup (75 grams) chopped walnuts
Heat your oven to 350 F (175 C). Liberally grease an 8x4 inch (20x10 cm) loaf pan with some butter.
Place the flour, cocoa powder, baking soda and salt in a bowl and whisk for a few minutes. Set aside.
In another bowl, cream together the oil, sugar, eggs and vanilla. Make sure to get rid of any brown sugar lumps.
Add the dry ingredients to the oil and egg mixture. Add the zucchini and fold in.
Mix the chocolate chips and walnuts in a small bowl.
Add half or the chocolate chip and walnut mix to the batter. Fold in.
Transfer the batter to the greased loaf pan. Top with the remaining chocolate chips and walnuts.
Place in the oven for 45 to 55 minutes — until a pick comes out clean.
Remove from the oven and place on a cooling rack. Allow cooling for about 15 minutes.
Run a knife alongside the loaf in order to separate it from the mold. Flip the mold to remove the bread. Flip it back and cool down completely on the rack. Slice and serve. Enjoy!
