Chicken Satay & My Spicy Peanut Sauce

Thanks for spending your quarantine with me! Today I have a super easy Chicken Satay recipe for you and a peanut sauce that is to die for! Chicken Satay can be served with steamed rice, or as an appetizer. You also don't have to skewer, you can just pan fry if that's more convenient.

Gai Satay (Chicken Satay)
Marinade:
2 lbs - chicken breast (cut into strips you can skewer)
1 C. - coconut milk
1/4 C. - water
2 tbsp - coriander seeds
1 tsp - cumin seeds
1.5 tsp turmeric powder
2 tsp - black pepper
1 tbsp - red curry past (used Aroy-D brand)
3 tsp - kosher salt
3 tsp - sugar
1 cube - Maggi chicken broth
1/4 C. - galangal chopped
3/4 C. - lemon grass chopped or ground
Peanut Sauce:
-Heat pan to med/low while cooking-
1/2 C. - corn oil
1/2 C. - coconut milk
1.5 tbsp - red curry paste (used Aroy- D brand)
2 tbsp - oyster sauce
1 tbsp - fish sauce (3 Crabs brand)
4 tbsp - tamarind paste/sauce
4 tbsp - coarse ground roasted peanuts (lightly roast peanuts on stove top or oven, do not add salt)
3 tbsp - sambal (Rooster brand, add more or less depending on your spice level)
2 tbsp - sugar
You will also need:
-skewers (if wooden, soak first before hitting the grill!)
-Mortar and pestle or something to blend/grind spices

One of the main characteristics of Indonesian cuisine is the wide applications of bumbu kacang (peanut sauce) in many Indonesian signature dishes such as satay, gado-gado, karedok, ketoprak, pecel. It is usually added to main ingredients (meat or vegetable) to add taste, or used as dipping sauce such as sambal kacang (a mixture of ground chili and fried peanuts) for otak-otak or ketan. Introduced from Mexico by Portuguese and Spanish merchants in the 16th century, peanuts found a place within Indonesian cuisine as a popular sauce. Indonesian peanut sauce represents a sophisticated, earthy thing rather than a sweet, gloppy sauce. Peanuts thrived in the tropical environment of Southeast Asia, and today, they can be found roasted and chopped finely, topping a variety of dishes and in marinades and dipping sauces. Peanut sauce reached its sophistication in Indonesia, with the delicate balance of taste acquired from various ingredients according to each recipe of peanut sauce; fried peanuts, gula jawa (palm sugar), garlic, shallot, ginger, tamarind, lemon juice, lemongrass, salt, chilli, pepper, sweet soy sauce, ground together and mixed with water to acquire right texture. Chicken Skewers with Spicy Peanut Sauce

Cook Time: 1 hour
For Chicken Skewers
• ½ cup low-sodium chicken stock
• ½ cup lite coconut milk
• 2 tbsp low-sodium soy sauce
• 1 shallot peeled and thinly sliced
• 3 cloves of garlic minced
• 1 ½ tsp Thai fish sauce
• 1 tbsp brown sugar
• 1 lime
• 1 tbsp minced ginger
• 1 lb skinless boneless chicken breast pounded slightly and cut into 1-inch strips
For Peanut Sauce
• ½ cup natural creamy peanut butter
• ¼ cup low-sodium chicken broth
• 3 tbsp low-sodium soy sauce
• 1 ½ tbsp brown sugar
• 1 ½ tbsp minced ginger
• 2 tbsp lime juice
• 1 tsp garlic minced
• ½ tsp chili flakes
• 1 tsp red curry paste
• 1 shallot peeled and roughly chopped
Mix chicken strips with marinade ingredients in bowl and let sit in refrigerator for 30 minutes.
In a blender, add all peanut sauce ingredients and blend until smooth.
Skewer chicken strips using bamboo skewers (soak skewers in water for 15 minutes prior to use so that they do not burn) and place on heated grill turning often until done. Serve with peanut sauce and enjoy!
Additionally, feel free to skewer and grill an assortment of chopped zucchini, mushrooms and eggplants that have been lightly brushed with olive oil and sprinkled with salt.

Chicken Satay (Serves 8)
Chicken Marinade:
1/2 kg chicken thigh fillet, cut into 1 cubes
2 tbsp soy sauce
1 tbsp fish sauce
2 tbsp sriracha, optional
1 tbsp curry powder
3 tbsp brown sugar
2 tbsp peanut butter
3 cloves garlic, minced
4 tbsp pineapple juice
2 tsp grated ginger
1 tsp sesame oil
1 tsp onion powder
1 tbsp garlic powder
1 tsp freshly squeezed lemon juice
pinch of salt & pepper
Peanut Sauce:
1 cup coconut milk
1/4 cup brown sugar
2 tsp finely grated ginger
1 tbsp curry powder
1 tsp soy sauce
1 tbsp sesame oil
1-2 tsp sriracha
4 tbsp peanut butter
1 tbsp freshly squeezed lemon juice (or vinegar)
2 tsp grated ginger juice, optional
crushed peanuts, optional
1 chili, chopped, optional
Salad:
1 whole cucumber, sliced
1/2 big onion, julienned
2 tomatoes, diced
Salad Dressing:
1/4 cup vinegar
1 tbsp white sugar
1 tbsp fish sauce (patis)
pinch of black pepper
chopped/crushed peanuts
*If you have extra peanut sauce from this recipe, save it for stir-fry with egg noodles or make other kinds of shrimp or pork satay.
