2 T Margarine
4 Skinless, boneless chicken
-breast halves 1 1/2 c Broccoli flowerets
1 1/2 c Sliced mushrooms
1 cn Campbell's NEW Cream of
-Chicken & Broccoli Soup 1/4 c Milk
2 T Dijon-style mustard
1. In skillet, in 1 TABLESPOON hot margarine, cook chicken 10 minutes
or until browned. Remove. 2. In remaining 1 TABLESPOON hot margarine, cook broccoli and
mushrooms until tender and liquid is evaporated, stirring often. 3. Stir in soup, milk and mustard. Heat to boiling. Return chicken to
skillet. Cover; cook over low heat 5 minutes or until chicken is no longer pink, stirring occasionally. Serve with noodles.

Ingredients
5 boneless skinless chicken breasts
2 tablespoons dijon mustard
2 tablespoons honey
1 teaspoon dried tarragon
1 pound mushrooms, sliced
salt and pepper, to taste
Instructions
1. Preheat oven to 350 degrees. Lightly grease a 9x13 pan.
2. Lay chicken breasts out in baking pan.
3. In a small bowl, mix together dijon mustard, honey, and tarragon. Brush over chicken breasts.
4. Sprinkle mushrooms over chicken. Season everything generously with salt and pepper.
5. Bake in the preheated oven for 40 minutes, or until chicken has reached an internal temperature of 165 degrees.

Creamy Mushroom Mustard Chicken Short - Tony's Comfort Kitchen
This creamy mushroom mustard chicken dish shouts comfort food. Guaranteed to put a smile on your face, the cream and the Dijon mustard work so well together, and then there's the mushrooms, chicken and above all, the pancetta to give you an incredibly flavourful dish.

Ingredients for two people
500g chicken thighs (skin and bone removed)
100g pancetta diced
150g sliced mushrooms
25g butter
1 onion chopped
1 tbsp Dijon mustard
3 cloves garlic finely chopped
1 tbsp chopped flat-leaf parsley
60g parmesan cheese
1 tsp dried thyme
1 tsp dried rosemary
300ml chicken stock
300ml double cream (heavy cream)
Salt and pepper to taste

Dijon Chicken & Mushrooms w/Roasted Asparagus - Dinner for 2
We are empty nesters and sometimes we just want a quick easy meal that is only 2 servings. Here is a quick and easy one skillet meal scaled down for 2 servings.
Ingredients:
4 chicken tenderloins
1 bunch of asparagus
4 ounces button mushrooms
1/2 cup chicken broth
1/4 cup heavy cream
2 tablespoons unsalted butter
1 teaspoon extra virgin olive oil
2 garlic cloves, minced
1/2 teaspoon thyme
1 tablespoon dijon mustard
2 teaspoons garlic powder
1 teaspoon onion powder
1 - 2 teaspoons salt
1 - 2 teaspoons pepper
Directions:
1. Wash asparagus and snap off ends. Wash mushrooms and slice.
2. To the asparagus add olive oil, 1/4 teaspoon salt, 1/4 teaspoon pepper, and 1 teaspoon garlic powder. Toss to coat.
3. Bring a medium pan and heat to medium. Saute asparagus for 3-5 minutes. Cooking to the doneness preferred. When done remove from pan and set aside and keep warm.
4. Season both sides of the chicken tenderloins with salt, pepper, garlic powder, and onion powder.
5. In the same skillet on medium heat add 1 tablespoon butter and the chicken tenderloins. Cook until golden brown and cooked through. About 3-5 minutes per side. Remove from pan and set aside.
6. In the same skillet over medium heat add 1 tablespoon of butter. Add mushrooms and saute until tender and liquid hss cooked off.
7. Add minced garlic and thyme and cook 30 seconds until fragrant.
8. Add the chicken stock and scrape up any brown bits. Add the heavy cream and Dijon mustard. Season with Salt and pepper to taste.
9. Add chicken back to sthe pan and bring to a boil. Reduce heat and simmer for 4-5 minutes until thickened.
10. Add asparagus to the plate and top with chicken and mushroom sauce. Enjoy!

I find the basic recipe for Chicken dijon in a supplement to the journal in our local paper and decided to customize it to our liking.
