1 1/4 c Butter; softened 1 1/4 c Brown sugar, packed 1 Egg 1 ts Vanilla 1 1/2 c All-purpose flour 1 ts Baking soda 1 ts Salt 3/4 ts Cinnamon 1/4 ts Nutmeg 3 c Quick oatmeal 1 c Dried cherries Preheat oven to 375 degrees. Beat together butter and brown sugar until light and fluffy. Beat in the egg and vanilla. In a bowl, combine flour, baking soda, salt, cinnamon and nutmeg; add to creamed butter mixture, mixing well. Stir in oatmeal and dried cherries. Drop by a rounded tablespoon onto an ungreased cookie sheet. Bake 8 to 11 minutes or until lightly golden. Cool one minute on cookie sheet, then remove. -----

Soft and chewy oatmeal cookies filled with dried cherries. Ingredients: 1/2 cup butter, softened 1 cup granulated sugar 1 cup all-purpose flour 1 1/2 cups quick oats 1/2 teaspoon salt 1/2 teaspoon baking soda 1 large egg 1 teaspoon vanilla extract 1 cup dried cherries INSTRUCTIONS
Preheat the oven to 350 F. In a medium bowl, whisk together flour, oats, salt, and baking soda. In a large bowl, combine butter with sugar until fluffy. Add in egg and vanilla extract, and mix until smooth. Add in the flour mixture, and mix until it is fully combined. Fold in the dried cherries. Roll the cookie dough into balls, place them onto a large ungreased baking sheet. Bake for 10-12 minutes.
