How To make Cherry Blossom Muffins
1/4 c Egg substitute
2/3 c Orange juice
2 tb Sugar
2 tb Oil
2 c Low-fat buttermilk baking
-mix 1/2 c Chopped pecans
1/2 c Sugar-free cherry fruit
-spread
In a bowl, combine egg substitute, orange juice, sugar and oil. Add baking mix; stir for 30 seconds. Fold in pecans. Coat muffin cups with nonstick spray or use paper liners; fill cups one-third full. Top each with 2 teaspoons fruit spread; cover with remaining batter.
Bake at 400? for 20-25 minutes or until muffins test done. Cool in pan 10 minutes before removing to wire equals 2 starch, 2 fat. Also, 241 calories, 330 mg sodium, trace cholesterol, 36 gm carbohydrate, 4 gm protein, 10 gm fat. Typed by Roberta Thompson Source: Country Woman Magazine May/June 1995

【材料】コキーユ型 6個分 / Coquille moulds for 6 pieces
□マフィン生地(Dough)
無塩バター / unsalted butter60g
グラニュー糖 / sugar 65g
全卵(M) / eggs(M) 55g(約1個)
アーモンドプードル / almond powder 10g
薄力粉 / cakeflour 110g
ベーキングパウダー / baking powder 5g
牛乳 / milk 20g
Wサクラプラス / W Sakura Plus 5g
※ない場合はそのまま減らしてOK
桜の花塩漬け / Cherry blossoms pickled in salt 20g
桜餡 / Cherry Blossom bean paste 60g
□デコレーション(Decoration)
ホワイトコーティングチョコレート / White coated chocolate 30g
桜の花塩漬け / Cherry blossoms pickled in salt 適量
ピスタチオ / pistachio 適量
【下準備】
・マフィン型に型紙を敷いておく
・バター、卵、牛乳は室温に戻しておく
(卵は割卵してほぐしておく)
・オーブンを170℃に予熱する
・粉類はよく混ぜ合わせておく
【作り方】
■マフィン生地
桜の花の塩漬けを分量外の水に浸け、塩抜きする。10分くらい経ったらキッチンペーパーで水気を切り、刻んでおく。
室温に戻したバターをヘラでほぐす。グラニュー糖を加えすり混ぜる。
ハンドミキサーに持ち替えて低速〜中速で空気を含ませるように混ぜていく。
白っぽくなったら、ほぐした卵を4~5回に分けて加えていく。加える度にしっかりと乳化させる。
※途中で一度ボウルの周りに飛び散った生地もヘラではらい、混ぜムラのないようにする
卵が全量入ったら、アーモンドプードルを加え混ぜる。
Wサクラプラスを加え混ぜる。混ざったらハンドミキサーからヘラに持ち替え、刻んでおいた桜の花の塩漬けを加え、均一に混ぜる。
粉類をふるい入れ、切るように混ぜる。ほとんど粉気がなくなってきたら牛乳を加え混ぜ合わせる。
牛乳が混ざったら、さらに生地にツヤが出るまで混ぜ合わせる。
型の1/3くらいまで生地を絞る。そこに桜餡を約10g入れる。その上に残りの生地を絞る。
170℃に予熱したオーブンで約25分焼く。
焼けたらすぐに型から外し、網の上で冷ます。
■デコレーション
桜の花の塩漬けを塩抜きし、水気を切ってキッチンペーパーに並べて電子レンジ600Wで1~2分加熱する。
乾燥して花が咲いたようになるので、それを飾りで使う。
コーティング用のホワイトチョコレートを溶かし、マフィンの表面に絞る。その上に桜の花、刻んだピスタチオなどを飾る。
一日寝かせたらより美味しくなります!

【Preparation】
Line a muffin mould with paper. / Bring butter, eggs and milk to room temperature.
(Crack the eggs and break them into pieces.)
Preheat the oven to 170℃. / Mix the flour until well combined.
【How to make】
■Dough
Soak the salted cherry blossoms in a little water to remove the salt, drain on kitchen paper after about 10 min and chop.
Beat the butter with a spatula until it comes to room temperature. Add the sugar and grind.
Switch to a hand mixer and mix on low to medium speed to make it aerated.
When the mixture becomes white, add the beaten eggs in 4 to 5 additions. Emulsify the mixture thoroughly with each addition.
Scrape off any dough that splatters around the bowl once during the process with a spatula to ensure even mixing.
When all the eggs are incorporated, add the almond powder and mix.
Add the W Sakura Plus and mix. Once mixed, switch from hand mixer to spatula, add the chopped salted cherry blossoms and mix evenly.
Sieve in the flour and mix to cut. When the mixture is almost powdery, add the milk and mix until combined.
Once the milk has been incorporated, mix until the dough is glossy.
Pipe the dough into the mould until it reaches about 1/3 of the mould. Fill it with about 10g of the cherry bean paste. Pipe the rest of the dough over it.
Bake in a preheated oven at 170℃ for about 25 min.
Remove from the moulds immediately after baking and leave to cool on a grid.
■Decoration
Remove the salted cherry blossom pickles from the salt, drain and place on kitchen paper in a microwave oven at 600 W for 1~2 min.
Use them as decorations as they dry out and look like blooming flowers.
Melt the white chocolate for the coating and squeeze it over the surface of the muffins. Decorate with cherry blossoms and chopped pistachios.
They taste even better if you let them rest for a day!
