How To make Cheery Cherry Muffins
2 c flour
1/3 c sugar
1/3 c maraschino cherries
quartered
1 tbsp baking powder
1/2 tsp salt :
optional
3/4 c buttermilk
1/4 c vegetable oil
4 tbsps cherry juice
1 egg beaten
1 tsp almond extract
4 tbsps almonds :
finely chopped
3 tbsps sugar
1. Preheat oven to 350 degrees. Grease muffin cups.
2. In a large mixing bowl, combine flour, sugar, cherries, baking powder and salt.
3. In a separate bowl, mix milk, oil, cherry juice, egg, and almond extract.
4. Make a well in the dry ingredients and stir in liquid just to moisten.
5. Fill muffin cups 2/3 full.
6. Combine almonds and remaining sugar; sprinkle over batter.
7. Bake at 350 for 25 to 30 minutes.
8. Cool 10 minutes before removing from muffin cups.
9. Makes 12 muffins

Chocolate Cherry Muffins Recipe
These are great if you don’t have a mixer as you just stir the ingredients into a custardy batter in a saucepan with a wooden spoon. No creaming or whipping required. Adding the rich ganache is gilding the lily really, but it serves as a delicious chocolate glue to stick the cherry on top.

Ingredients
2 tablespoons cocoa powder
100g soft brown sugar
220ml water
50g cornflour
75g butter - cut into cubes
75g good quality milk chocolate - chopped
50g dark chocolate - chopped
75ml sunflower oil
1 teaspoon vanilla extract
2 large eggs
125g caster sugar
2½ teaspoons baking powder sifted into 125g plain flour
Topping
120g chocolate
120ml double cream
Cherries
Put the cocoa, soft brown sugar, water and cornflour into a medium, non stick saucepan and stir gently but constantly with a wooden spoon until it melts, then thickens.
As lumps appear pull it off the heat and beat with the spoon.
Remove from the heat and stir in the butter and chocolate until it’s melted.
Add one egg and the oil and vanilla and stir well.
Add the second egg and caster sugar and stir again.
Pour the flour/baking powder in and stir well until completely mixed.
Spoon into 12-13 muffin cases in a muffin tray and bake for 25 minutes at 170ºc
To finish
While they are cooling heat 120ml of double cream in a small pan.
When it is hot, and as it starts to bubble at the edges take it off the heat and stir in 120g of chocolate.
Let this cool a little until it is thick and spoonable then spoon onto the muffins.
Top with a cherry.

INGREDIENTS:
Muffins:
1 cup sugar
2 cups flour
2 eggs
1 tsp baking soda
¾ cup butter, melted
½ cup milk
3/4 cup canned cherries, chopped
12 maraschino cherries for topping
Double Cream Frosting:
8 ounce package cream cheese
1/2 cup butter softened
1 1/2 cup sifted powdered sugar
1 tsp. vanilla extract
INSTRUCTIONS
1. Cut the cherries into small pieces.
2. In a large bowl, add the flour, baking soda, and sugar and stir to combine the dry ingredients. Add the eggs, milk and cherries. Mix well.
3. Pour the mixture into a muffin tray and bake for 30 minutes.
4. Make the frosting: In a medium bowl, cream together the cream cheese and butter until creamy. Add the vanilla extract, and gradually stir in the powdered sugar. 5. Wait until cooled, and decorate each muffin with double cream frosting and a cherry on top.

This Muffin recipe is by far the best you'll ever find, it uses Olive Oil to add richness and flavour to the sponge so no more bland boring Muffins for you! It's simple, quick and doesn't use any fancy equipment so you can enjoy making them with zero stress! Plus the chances are you have all the ingredients that you need already!

For 12 Muffins
Preheat Oven to 170C (fan assisted)
250g Caster Sugar
Zest of 2 Lemons
3 Large Eggs
250ml Whole Milk
250ml Light Olive Oil
375g Plain Flour
2 tsp Baking Powder
1/4 tsp Salt
100g Fresh Raspberries
100g White Chocolate Chips
Try mixing up your flavours:
Lemon and Blueberry
- Add 100g or fresh or frozen Blueberries
Chocolate and Orange
- Switch out the Lemon Zest for Orange Zest
- Add 100g whatever chocolate chips you like
Cinnamon Apple and Pecan
- Add 1 tsp Ground Cinnamon
- Chop up 1 Small Apple into cm diced
- Add 100g chopped Pecans
