How To make Caramel Glazed Apple Pecan Pound Cake

L.A.TIMES FOOD SECTION 11/94:
2 1/2 c Green apples; chopped
1 c Butter; softened
1 1/2 c Sugar
1 1/2 ts Vanilla
5 Eggs
2 c Flour
1 tb Baking powder
1 tb Ground cinnamon
3/4 c Pecans, chopped
CARAMEL SAUCE:
1/2 c Brown sugar; packed
1/2 c Granulated sugar
1/2 c Whipping cream
1 tb Butter
In skillet, lightly saute apple chunks in 2 tablespoons butter. Set aside. In bowl, cream remaining butter with sugar until light and fluffy. Beat in vanilla. Beat in eggs 1 at a time. In bowl sift together flour, baking powder and cinnamon. Stir into butter mixture until blended. Fold in apples and pecans. Spoon into greased and floured bundt pan. Bake at 325 degrees 1 hour, or until wood pick inserted near center comes out clean. Glaze with Caramel Sauce. CARAMEL SAUCE - Combine brown sugar, sugar and whipping cream in medium saucepan. Bring to boil. Cook and stir, about 2 minutes. Remove from heat. Stir in butter until melted. Cool. Then drizzle over cake. Each serving, with Caramel Sauce, contains about: 495 calories; 306 mg sodium; 146 mg cholesterol; 26 grams fat; 62 grams carbohydrates; 6 grams protein; 0.28 gram fiber.

Caramel Apple Cake

Ingredients
Cake:
Nonstick cooking spray or unsalted butter, for greasing the pan
3 cups all-purpose flour, plus more for the pan
2 teaspoons ground cinnamon
1 teaspoon baking soda
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
3 medium apples (I used a mix of green and Pink Lady apples)
1 1/2 cups vegetable or canola oil
2 cups granulated sugar
1/2 cup dark brown sugar
2 teaspoons vanilla extract
3 large eggs
Caramel Sauce:
One 11-ounce package caramels, preferably Kraft Caramels
1/4 cup whole milk
Directions
For the cake: Preheat the oven to 325 degrees F. Generously grease and flour a 9- or 10-inch Bundt pan.
Mix together the flour, cinnamon, baking soda, nutmeg and salt in a medium bowl. Set aside. Peel, core and dice 3 cups apples. Set aside.
Blend the oil, sugars and vanilla in a bowl with a handheld electric mixer or in a stand mixer until well mixed. Add the eggs one at a time, mixing well after each addition. Stir in the dry ingredients until just incorporated. The batter will be very thick. Fold in the apple pieces. Spoon the batter evenly into the prepared pan.
Bake the cake until a toothpick inserted in the center comes out with only a few moist crumbs, about 1 hour 15 minutes. Let cool for 20 to 30 minutes, then remove the cake from the pan to a cooling rack.
For the caramel sauce: Meanwhile, heat the caramels and milk in a saucepan on medium-high heat, stirring constantly, until the caramels are completely melted and the sauce is smooth, about 2 minutes. Let cool for 1 to 2 minutes, then drizzle over the cake just before serving.

APPLE BUNDT CAKE
INGREDIENTS
CAKE
2 cups (450g) sugar
1 cups (240g) oil
3 eggs room temperature
2 tsp vanilla extract
3 cups (384g) all-purpose flour
1 tsp baking soda
1 tsp cinnamon spice
1/2 tsp salt
4 medium apples peeled and diced
9Inch Bundt Pan Grease with butter or oil
350*F (180*C) for 45-50 min until toothpick come clean
cool to room temperature
BUTTER GLAZE
1/2 cup (1 stick) (113g) butter
1/2 cup packed brown sugar
1 tsp. vanilla extract
1/4 cup heavy cream
cool to room temperature
