How To make Caramel Pecan Cake
3 tb Boiling water
2 oz Sweet cooking chocolate
3/4 c Sugar
1/4 c Plus 2 tbls. margarine; soft
-ened 2 Egg yolk
1/2 ts Vanilla
1 c Softasilk cake flour
1/2 ts Baking soda
1/8 ts Salt
1/4 c Plus 2 tbls. buttermilk
2 Egg whites
Caramel topping; (see -recipe) 12 oz Semisweet chocolate chips
1/2 c Pecans
Recipe by: SUMMER DESSERTS Heat oven to 350 degrees. Grease and flour rectangular pan, 13x9x2". Pour boiling water on chocolate, stirring until
melted; cool. Beat sugar and margarine in large bowl until light and fluffy. Beat in egg yolks, one at a time. Beat in chocolate mixture and vanilla on low speed. Mix in flour, baking soda and salt alternately with buttermilk, beating after each addition, until batter is smooth. Beat egg whites until stiff; fold into batter. Pour into pan. Bake about 20 minutes or until toothpick inserted in center comes out clean. Spread Caramel Topping (see recipe) over hot cake; sprinkle with chocolate chips and pecans. Bake about 20 minutes longer or until chocolate chips melt. Cool before serving. -----

Pecan Topping
1 cup 150 g coarsely chopped pecans
1/4 cup 83g light corn syrup or honey
1/2 cup 110 g firmly packed brown sugar light or dark brown sugar
1/2 cup 113 g unsalted butter
1/4 tsp ground cinnamon
pinch of salt

1/2 cup 122 g sour cream or greek yogurt
1/2 cup 118 ml neutral oil ( vegetable oil or grapeseed oil)
1/4 cup milk /60 ml
2 large eggs
1&1/2 cups (204 g ) All Purpose Flour (make sure to spoon and level the flour)
1&1/2 tsps baking powder
1/2 tsp baking soda
1 tsp vanilla extract or paste
pinch of salt
3/4 cup 150 g granulated sugar

* 1 كوب 150 جرام جوز امريكي او جوز عادي مفروم خشن
* 1/4 كوب 83 جرام شراب ذرة خفيف أو عسل
* 1/2 كوب 110 جم سكر بني فاتح أو سكر بني غامق
* 1/2 كوب 113 جم زبدة
* 1/4 ملعقة صغيرة قرفة مطحونة
* قليل من الملح

* 1/2 كوب 122 جرام كريمة حامضة أو زبادي يوناني
* 1/2 كوب 118 مل زيت محايد (زيت نباتي أو زيت بذور العنب)
* 1/4 كوب حليب / 60 مل
* 2 بيضه كبيره
* 1 & 1/2 كوب (204 جم) طحين لجميع الأغراض (تأكد من وضع ملعقة وتسوية الدقيق)
* 1 & 1/2 ملعقة صغيرة خميرة حلويات
* 1/2 ملعقة صغيرة من بيكاربونات صودا
* 1 ملعقة صغيرة فانيليا
* قليل من الملح
* 3/4 كوب 150 جم سكر خشن
❌❌❌INSTRUCTIONS
Preheat Oven 350F
Heat a pan over medium-low heat. Add the butter, brown sugar, corn syrup or honey, cinnamon, salt, and pecans. Cook the mixture, stirring frequently, until the butter has melted and the sugar has dissolved.
Remove from the heat. Make sure to not to cook the mixture beyond just melting the butter and getting the sugar dissolved.
Add the pecan mixture to a greased 9 inch round cake pan. Spread the mixture evenly and set aside.
In a large bowl, beat the eggs, sugar and vanilla extract for 1 minute on high speed. Now add the oil and mix. Add the sour cream, milk and mix until full incorporated.
Sift in the dry ingredients ( all-purpose flour, baking powder, baking soda). Mix until the batter is smooth and lump free. Do not over mix the batter.
Pour the batter over the pecans and spread the batter evenly. Place the cake on the middle rack and bake for 35-38 minutes or until a toothpick inserted comes out clean.
Gently run a butter knife along the edges of the cake. Allow the cake to cool for 5-8 minutes before flipping onto a plate. Be careful while doing this as the pan is still hot. Scoop any pecans and sauce remaining in the pan over the cake. Serve a slice of cake with a scoop of vanilla ice cream. Enjoy!

1/4 tsp (1g) nutmeg

1 cup (100g) pecans, toasted
Caramel Frosting
8 oz (230g) Cream cheese or Mascarpone cheese, room temperature
1/4 cup (60g) salted caramel sauce
1/4 cup (30g) powdered sugar
1/2 tsp (2g) cinnamon
1 tsp (5g) vanilla extract
1 cup (240g) whipping cream, chilled
