How To make Brown Soda Bread
1 3/4 c All purpose flour
1 ts Salt
1 ts (heaped) baking soda
2 1/4 c Whole wheat flour
2 tb Margarine
1 1/4 c Buttermilk
Sift flour, salt, soda into bowl. Stir in whole wheat flour, blending. Rub in margarine lifting fingers high when mixing. Add buttermilk all at once, using fork. Add more, if needed, to make soft dough. Knead until smooth. Place on greased baking sheet; mark to deeply into four sections. Bake at 375 degrees for 40 minutes. Allow to go cold on rack before cutting. Serve with butter. Preparation time: 20 minutes Baking time: 40 minutes

Darina Allen's Irish Soda Bread
Katy’s Brown Soda Bread Recipe (Gougane Barra Hotel)
We have been making this brown bread at Gougane Barra Hotel for 15 years now. It goes well with soup or chowder, with smoked salmon on top of it and even for breakfast with butter and jam!
Makes 4 x 445g / 1 lb loaves or 2 x 890g / 2lb loaves
Ingredients
- 650g /1.5 lbs Brown wholemeal flour (or extra coarse wholemeal)
- 225g /0.5lb. Plain White flour
- 2tsp. Bread soda (bicarbonate of soda) sieved
- Optional: 50g / 2 oz. Demerara Brown sugar
- 4 Free-range Eggs
- Optional: 1 - 3 dessert spoons of Treacle (warmed slightly)
- 100g /4 oz. Irish Butter
- 850ml Buttermilk
- Optional: Handful of roughly chopped walnuts
- A handful of pinhead oatmeal and a little porridge oats can also be added if you like coarser bread
Method
- Preheat oven to 170ºC.
- Mix all of the dry ingredients very well in a mixing bowl.
- Beat the eggs with an electric mixer / whisk. Add the warmed treacle and then the butter. Add ¾ of the buttermilk.
- Make a well in the centre of the dry ingredients and add all the liquid ingredients. Mix well. Add the remaining butter milk, if required.
- Divide mixture into 4x (445g) 1 lb. lightly oiled bread tins.
- Optional: Shake sesame seeds on top
- Bake at gas 3 (170ºC) for one hour or a little under.
We always listen to our bread to decide when it is ready, when it has stopped whispering it is ready.

How to bake Irish Brown Bread | Only 8 ingredients | No yeast bread
Learn how to make a loaf of Irish Brown Bread which comes together in 10 minutes flat and bakes in less than an hour. This is the most satisfying bread to dip into soup comes from the Irish who understand the importance for warming themselves through the cold and rainy winters.
Makes 1 loaf (approx 12 servings)
Ingredients:
298 grams / 2 1/3 cups wholemeal flour
222 grams / 1 1/3 cups + 1 tablespoon plain flour
1 teaspoon sea salt
5 grams / 1 teaspoon baking soda
25 grams / 2 tablespoons butter, room temperature
414 milliliters / 1 3/4 cups buttermilk
1 egg
21 grams / 1 tablespoon honey
Directions:
Preheat oven to 200ºC/400F and greaseproof a bread tin.
Sift the flour and baking soda in a bowl. Add the salt and wholemeal flour and stir to combine.
Add in the butter and cut or rub into the flour until the mixture resembles breadcrumbs.
In a separate bowl, whisk the buttermilk, honey and egg and until well combined.
Make a well in the flour and add the buttermilk mixture, folding until a dough is formed.
Spoon into the bread tin and smooth out.
Slice a line into the center of the loaf and place in the oven to bake until golden on top, approximately 45 minutes.
Remove and allow to cool.
Slice and serve warm.
