Cheddar Rosemary Irish Soda Bread
The easiest, tastiest bread you'll have within the hour.
Soda Breads are a staple of Irish cuisine. Most people associate it with St. Patricks Day, but if you wait until March to make this, you're missing out.
INGREDIENTS:
2 cups apf
1 tsp baking soda
1 tsp garlic salt
1 tsp caraway seeds
2 tsp fresh chopped rosemary
1 cup cheddar
2 eggs
3/4 cup buttermilk
3 tbs oats
INSTRUCTIONS:
1. Preheat oven to 425F
2. Mix together flour, baking soda, salt, herbs and seeds.
3. Whisk together eggs and buttermilk. Pour in the buttermilk mixture to the flour.
4. Gently mix the dough until it just comes together.
5. Shape into a ball. Glaze with any remaining buttermilk and top with more seeds and herbs. Top with oats.
5. Score an x into the bread.
6. Bake at 425F for 28 minutes.

Soda bread is a variety of quick bread traditionally made in a variety of cuisines in which sodium bicarbonate (otherwise known as baking soda) is used as a leavening agent instead of the more common yeast. The ingredients of traditional soda bread are flour, baking soda, salt, and buttermilk. This bread is also traditional in Serbia, where is called pogacha or česnica/чесница and it is served mostly on Orthodox Christmas. It's traditional in Scotland, and Australia, too.
Quick Irish Soda Bread
Ingredients:
4 cups (about 500g) All-purpose Flour +for dusting/kneading
2 tsp. Kosher salt
3/4 tbsp. Baking soda
1 large egg*optional
2 cups (16 FL Oz/473 ml) Cold Buttermilk
Oil for greasing the pan
