4 c Flour 1 t Salt 1 t Baking soda 1 t Sugar (optional) 2 c Buttermilk Mix dry ingredients. Add enough buttermilk to make a soft dough. Knead the dough lightly. Form a round loaf about as thick as your fist. Place it on a lightly-floured baking sheet and cut a cross in the top with a floured knife. Bake near the top of a preheated 450 degree oven for 30-45 minutes. The first recipe is adapted from one I found years ago in the newspaper. The second recipe is from "A Little Irish Cookbook" by John Murphy Chronicle Books, 1986 (ISBN: 0-87701-400-0) Anne Callery From: Anne Elizabeth Callery <callery@leland.Stanford.edu>

Bread Baking: Basic White Bread - German Recipe
It's about we had a simple, basic white bread recipe. This recipe is a German standard.
Basic Yeast Bread: 4 cups (500g) flour 1 generous cup (250mL) warm water (body temperature) 1 tbsp dry yeast 1 tsp salt 1/2 tsp sugar Add the water, yeast and sugar to a large mixing bowl, combine and allow to sit for a minute or two to activate the yeast. Combine salt and flour and add to the water mixture. Mix together until mixture becomes too thick to stir. Then turn it out on a clean surface and knead for a few minutes. In the end, the dough should be soft, but not sticky. You may need a tablespoon or two more or less flour. Allow to rest, covered, in a warm, dry place until the dough doubles in size (about an hour). Punch down and knead briefly. Shape into a loaf size and place in greased baking pan. Cover and allow to rise for another half an hour or so. Cut the top of the dough, if desired. Bake at 350°F or 180°C for about 40 minutes or until tapping on the crust sounds hollow. You can also bake with a pan of water in the oven if you want a crispier crust. Butter the top as soon as it comes out of the oven. You can remove from pan and eat while still hot, if desired. Will keep in an airtight cover for about 3 days.
