How To make Brainy Bran Muffins
PHILLY.INQUIRER:
8 tb Butter,room temperature
1/2 c Brown sugar
1/4 c Honey
2 Eggs
1 1/3 c Flour
1 1/2 ts Ground cinnamon
1/2 ts Salt
1 1/2 c Bran flake cereal
1 1/2 c Buttermilk
1/2 c Raisins
IRWIN E.SOLOMON:
Place paper liners inside muffin tin.Preheat oven to 375~.
Combine butter and sugar in mixing bowl and cream together until smooth. Add honey and blend. Add eggs and blend on low speed.Mixture will look soupy.Add 1/2 the flour,all of the baking soda,cinnamon and salt.Add bran flakes and blend.Add 1/2 the buttermilk and blend.Then add the remaining
flour,followed by the remaining buttermilk.Blend until smooth. Stir in raisins.Spoon batter into muffin tin until 3/4 full.
With mitted hands,carefully place muffin tin into oven and bake for 25 minutes. Turn oven off,and,with mitted hands,carefully remove tin.Let muffins cool for 10 minutes,then,with covered hands,turn tin on its side,letting muffins fall out. Use a table knife to loosen any stubborn muffins.Cool completely before wrapping in plastic wrap to freeze.Makes 12 muffins.

BRAN MUFFINS - the delicious muffin you've never heard of
Bran muffins are delicious and relatively healthy muffin that is super easy to make that even I could make it. It's not an overly sweet muffin like most - and is a great thing to have for breakfast or a light snack.
For this recipe we pulled some inspiration from Toni's childhood. Bran muffins are a hidden gem and you should definitely try it out!

Almond Milk Recipe:
INGREDIENTS (makes 12 muffins)
2 tbsp egg replacer + 4 tbsp water OR 2 eggs OR flax egg equivalent
2 cups bran cereal
1 3/4 cup almond milk (recipe here:
1 1/2 cup all purpose flour
1/2 cup brown sugar
1 tbsp baking powder
1/4 tsp kosher salt
1/4 cup apple sauce
DIRECTIONS
1. Preheat oven to 400F
2. Prepare egg replacer by combining with water and whisk. Set aside.
3. Put bran cereal in bowl with almond milk. Set aside.
4. Put flour, sugar, baking powder and salt in bowl and combine.
5. Add egg replacer mixture to cereal mixture. Mix well.
6. Add the wet ingredients into dry ingredients. Mix enough to combine - avoid overmixing.
7. Spray muffin tray with cooking oil and spoon equal amounts of muffin mixture into tray.
8. Bake for 18-22 minutes. Start timer at 18 and cook additional if needed. Use toothpick or touch test to check for doneness
9. Serve on its own or with butter.
10. Enjoy :)
These store well in a plastic container with the lid slightly ajar.

This recipe is low fat, low sugar, low sodium, but high protein, high fibre and highly delicious!!
A no guilt treat, snack, dessert, breakfast, after workout option! You can serve for any occasion, party, holiday, or family dessert!!
Preheat your oven to 350 degrees!
Spray a regular size 12 muffin tray or you can make 24 mini ones
Bake for 30 - 45 minutes depending on your oven.
Ingredients :
1 cup oatmeal 8sp (????????)
1/2 wheat bran 3sp
2 large or extra large eggs
1/2 shredded carrot
1/4 cup mashed Banana
1/3 cup plain Greek no fat Yogurt
2tbs melted I Can't Believe It's Not Butter Light 2sp
1tsp Cinnamon
3/4 cup fresh or canned pineapple chunks
1/2 tsp baking powder
1/2 tsp baking soda
Sprinkle of pink Himalayan salt
1 tbs vanilla
1tbs sugar free coconut syrup (or regular)
1/4 cup monk fruit sugar ( or any kind of sugar substitute or sugar/honey)
2tbs toasted almonds
Optional :
Add crainsins
Add coconut
Add dates
Add orange or lemon juice
Add raisins
Add other nuts
Add seeds
Add sliced apple
Directions :
In a large bowl add oatmeal, wheat bran, baking powder and baking soda, cinnamon, salt and mix well.
Set aside.
In another bowl add eggs, sugar, melted butter, mashed Banana, yogurt, vanilla, coconut syrup and mix well.
Add wet to dry ingredients
Add carrots and pineapple
Mix together with a fork
Tip... If using shredded bagged carrots... Pulse in a Cuisinart to mash further! Turns out better!
Tip... Toast your almonds first!
Add mixture to your muffin tray ( I used a 1/3 cup to measure)
Sprinkle lightly with Cinnamon over each muffin and add the almonds to each too!!
You can add the nuts in the mixture too if you like!
Bake for 30 minutes and check. Mine took 45 minutes. But every oven temperature varies so keep an eye on them.
Check to make sure they are fully baked with a tooth pick or wooden skewer! If it comes out dry they are baked!
Take a tiny spatula or butter knife and go around the outside of the muffin shortly after they are baked to prevent sticking.
Allow to fully cool down before removing from the pan!!

Sweet Potato Muffins Recipe:
Julie’s Amaranth Porridge with Baked Apple Slices (from the Vegan & Raw 2 cookbook)
2 servings
1-1 1/2 cups (210-320 ml) water (the more water, the thinner the porridge)
1/2 cup (100 g) amaranth, uncooked
sea salt to taste
4 apples (or pears)
coconut oil
ground vanilla and cinnamon to taste
1/2 cup (100 ml) almond milk
1 handful of mixed nuts or seeds
Bring the water to a boil in a saucepan.
Add the amaranth and a pinch of sea salt. Let simmer over low heat for about 10 minutes until the amaranth is cooked.
While cooking the amaranth, core and slice the apples. Feel free to leave on the peel if they’re organic.
Heat a little coconut oil in a large pan. Bake the apple slices until tender and sprinkle with ground vanilla and cinnamon. I prefer them naturally sweet but you could add a drizzle of maple syrup too.
Serve the warm amaranth with almond milk and baked apple slices. You could add some mixed nuts or seeds as well if you like crunchy toppings.
Or how about a spoonful of smooth almond butter or a few tablespoons of coconut yogurt? Extra cream and delicious!

You can replace the amaranth with quinoa, buckwheat, brown rice, oats… Simply adjust the amount of water as needed.
