How To make Brainy Bran Muffins
PHILLY.INQUIRER:
8 tb Butter,room temperature
1/2 c Brown sugar
1/4 c Honey
2 Eggs
1 1/3 c Flour
1 1/2 ts Ground cinnamon
1/2 ts Salt
1 1/2 c Bran flake cereal
1 1/2 c Buttermilk
1/2 c Raisins
IRWIN E.SOLOMON:
Place paper liners inside muffin tin.Preheat oven to 375~.
Combine butter and sugar in mixing bowl and cream together until smooth. Add honey and blend. Add eggs and blend on low speed.Mixture will look soupy.Add 1/2 the flour,all of the baking soda,cinnamon and salt.Add bran flakes and blend.Add 1/2 the buttermilk and blend.Then add the remaining
flour,followed by the remaining buttermilk.Blend until smooth. Stir in raisins.Spoon batter into muffin tin until 3/4 full.
With mitted hands,carefully place muffin tin into oven and bake for 25 minutes. Turn oven off,and,with mitted hands,carefully remove tin.Let muffins cool for 10 minutes,then,with covered hands,turn tin on its side,letting muffins fall out. Use a table knife to loosen any stubborn muffins.Cool completely before wrapping in plastic wrap to freeze.Makes 12 muffins.

This recipe is low fat, low sugar, low sodium, but high protein, high fibre and highly delicious!!
A no guilt treat, snack, dessert, breakfast, after workout option! You can serve for any occasion, party, holiday, or family dessert!!
Preheat your oven to 350 degrees!
Spray a regular size 12 muffin tray or you can make 24 mini ones
Bake for 30 - 45 minutes depending on your oven.
Ingredients :
1 cup oatmeal 8sp (????????)
1/2 wheat bran 3sp
2 large or extra large eggs
1/2 shredded carrot
1/4 cup mashed Banana
1/3 cup plain Greek no fat Yogurt
2tbs melted I Can't Believe It's Not Butter Light 2sp
1tsp Cinnamon
3/4 cup fresh or canned pineapple chunks
1/2 tsp baking powder
1/2 tsp baking soda
Sprinkle of pink Himalayan salt
1 tbs vanilla
1tbs sugar free coconut syrup (or regular)
1/4 cup monk fruit sugar ( or any kind of sugar substitute or sugar/honey)
2tbs toasted almonds
Optional :
Add crainsins
Add coconut
Add dates
Add orange or lemon juice
Add raisins
Add other nuts
Add seeds
Add sliced apple
Directions :
In a large bowl add oatmeal, wheat bran, baking powder and baking soda, cinnamon, salt and mix well.
Set aside.
In another bowl add eggs, sugar, melted butter, mashed Banana, yogurt, vanilla, coconut syrup and mix well.
Add wet to dry ingredients
Add carrots and pineapple
Mix together with a fork
Tip... If using shredded bagged carrots... Pulse in a Cuisinart to mash further! Turns out better!
Tip... Toast your almonds first!
Add mixture to your muffin tray ( I used a 1/3 cup to measure)
Sprinkle lightly with Cinnamon over each muffin and add the almonds to each too!!
You can add the nuts in the mixture too if you like!
Bake for 30 minutes and check. Mine took 45 minutes. But every oven temperature varies so keep an eye on them.
Check to make sure they are fully baked with a tooth pick or wooden skewer! If it comes out dry they are baked!
Take a tiny spatula or butter knife and go around the outside of the muffin shortly after they are baked to prevent sticking.
Allow to fully cool down before removing from the pan!!

Description: A super easy Blueberry muffin recipe with optional Blueberry Pie filling topping (doesn't change SP value). You can use other fruit if you are not a blueberry fan!
Smart Point Value on Blue: 1 SP with or without the pie filling topping
I will be making this on the Weight Watchers Blue Plan. You can use this recipe for the Weight Watchers Green Plan & Weight Watchers Purple plan but please be sure to calculate points using the recipe builder on WW online or in the WW app.
Ingredients:
✅ 1.5 Cups protein waffle/pancake mix (i used Kodiak buttermilk)
✅ 1/2 Cup of unsweetened cashew milk (or almond/any 0 SP dairy)
✅ 1/4 Cup of monk fruit or other 1:1 sugar replacement (not stevia)
✅ 1 Egg
✅ 1/2 Cup of unsweetened applesauce
✅ 1 Cup (+) of fresh blueberries (if using frozen see video for tip)
✅ 1 tsp baking powder
Instructions:
1️⃣ Preheat oven to 350 degrees
2️⃣ Combine monk fruit, pancake/waffle mix, applesauce, egg, and milk
3️⃣ add and stir in baking powder and fresh blueberries
4️⃣ use a non stick muffin tin (12) or spray liners *foil* with nonstick
5️⃣ split batter up between 12 muffin holes
6️⃣ bake for about 15 minutes (use toothpick test to double check)
7️⃣ Allow to cool and enjoy
If you wish to add a pie filling topping take a seperate cup of blueberries and place them in a pan with just enough sugar free maple syrup to wet the tops of the berries (couple splashes) along with 1/4C of monkfruit. Mash stir & berries in pan to desired consistency (not fully mashed) and allow to cook down. Take a tbsp of cornstarch and mix it in a small bowl with just enough tap water to turn it into a liquid (less than a tbsp) mix and pour into berrys while mixing (turn heat off) you should not need to use more than 1 or 2 tbsp of cornstarch (2 SP)
