Blueberry Jelly - Traditional Newfoundland - Bonita's Kitchen
Welcome to Bonita's Kitchen! Today we will be making BLUEBERRY JELLY, made with freshly picked blueberries from Newfoundland. SEE RECIPE BELOW!

Canning Jars!
Ingredients:
BLUEBERRIES fresh or frozen
Water (TO COVER TOP OF BLUEBERRIES)
Granulated sugar ( 1 cup to every 1 cup of juice )
Method:
-Wash BLUEBERRIES and remove any raw berries and leaves.
-You will need a large boiler, pour blueberries in and top with water level with berries or one cup water to every two cups berries, mash berries first or after the berries start to boil.
-Let boil on medium to high heat until blueberries are stewed and pulpy, then mash berries until they release all juice, turn heat to low and simmer for 10 to 15 minutes.
-In a large bowl with strainer pour all blueberries and juice in to strainer let drain gently pushing juice through strainer.
-Let blueberries drain to release all juice and pectin in bowl.
-You will need a large saucepan, measure juice and add to pot, to every one cup of juice you will add one cup of granulated sugar.
-Bring berry juice to a boil and boil rapidly until jelly sets when tested, takes around 20 minutes.
-Bottle jelly, following proper sterilization processors.
Testing Juice:
-You will need a small bowl and put in the fridge to cool, maybe 1 hour.
-Spoon up some blueberry juice and put the spoon in the bowl and let set.
-If the juice turns to a soft jelly you know the juice with set in jars.
Sterilizing and Canning Procedures
Method:
Sterilization:
1. Start by getting a large boiler and filling in about quarter full of water.
2. Then starting the water to a boil and placing your Mason jars inside then cover.
3. After let the pot boil for about 15-20 then remove your bottles and place them on paper towels or a cloth.
Canning Procedures:
1. After your food items are cooked and ready to bottle, scoop hot liquid and put inside your Mason jars.
2. Continue doing this until all bottles are complete and leaving 1/2 inch on top.
3. Clean around the top of your bottles removing any food of rims.
4. Then place caps and lids on your jars and tighten.
5. Then place your jars back in hot water bath and start the boil for another 5 minutes with the cover on boiler.

Bonnie’s Best Hoosier Recipes/ Microwave Blueberry Jam
It doesnt get any Easier than this!
Quick easy, Not too Sweet
2 cups fresh or frozen blueberries
1/3 cup sugar• pinch of salt• 2 tablespoons lemon juice• 1 teaspoon lemon zest• 1/4 teaspoon vanilla
Combine altogether in microwave bowl with high sides
Microwave on high 3 minutes til sugar dissolved
Continue on high stiring every 2 minutes
For 6-10 minutes til juice doesnt drip off spoon
Spoon into 8 oz. jar. Store covered 3-4weeks
Delicious!!!!

BREAKFAST MUFFINS
Preheat oven to 350º, Bake for 30 minutes depending on your oven, 10 minutes prep,
Method:
1. In a medium bowl add all the eggs and mix together.
2. Then add all the other ingredients except the ham.
3. In a muffin pan spray with oil or butter, add one slice of ham to each muffin cup.
4. Pour equal amounts of egg mixture in each one, top with more shredded cheese and topped with a pinch of Italian spice.
5. Bake in a preheated oven for 30 minutes depending on your oven.
6. When cooked, cool for five minutes before removing them from the pan, serve with your choice of side food.
Bonita’s Tips:
You can add any type of veggie, cheese or meat into your Breakfast Muffin.
Freeze in container and remove each day when you like to eat them.

Blueberry muffins but I like chocolate muffins better
Blueberry Muffins -Traditional Newfoundland - Bonita's Kitchen

Ingredients:
1½ cups flour
1 cup sugar
2 large eggs
2 tsp baking powder
½ tsp sea salt
1 tsp vanilla
1 cup butter
1 cup carnation milk or 2% fresh milk and ½ cup flour to toss together.
1 cup fresh or frozen blueberries, ½ cup flour to coat berries.
Method:
Preheat oven to 400°F, bake time 25 minutes; prep time; 15 minutes; cook time 25 minutes.
In a large bowl mix together butter, sugar until fluffy, then add vanilla, milk and eggs. Continue mixing together until batter is fluffy. Sift together 1½ cups flour, sea salt, and baking powder fold into butter and sugar mixture until fluffy.
In a small bowl add your blueberries and ½ cup flour toss together until all berries are coated with flour, then fold them into your batter.
Pre-grease your muffin pans or put liners in them, scoop equal amounts of batter in each one until batter is all used.
Place in 400°F oven, bake for 25 minutes or until golden brown. After baked place on a rack to cool, cover with cloth for 5 minutes then remove cloth and sift icing sugar powder over top of them.
(I used frozen blueberries i picked in Augusts they are so good.)
