How To make Blueberry Orange Muffins
1 3/4 c All-purpose flour
2/3 c Packed brown
Sugar 1 tb Baking powder
1 tb Grated orange rind
1 c Milk
2 Eggs
3 tb Butter, melted
1 ts Vanilla
1 c Blueberries
In bowl, stir together flour, sugar, baking powder and orange rind. Whisk milk, eggs, butter and vanilla; stir into flour mixture just until blended. Fold in blueberries. Spoon into lightly greased muffin tins, filling three-quarters full. Bake in 400 degree F (200 C) oven for 20 to 25 minutes or until golden and firm to the touch. Makes 12 muffins. Per muffin: about 165 calories, 4 g protein, 4 g fat, 28 g carbohydrate.

Blueberry and Orange Muffins
BLUEBERRY AND ORANGE MUFFINS
2 cups all purpose flour
1 ¼ cup sugar
1 cup fresh or frozen blueberry
½ cup milk
½ cup butter,room temperature
2 whole eggs
2 tsp baking powder
½ tsp salt
1 lemon zest
1 lemon juice
2 tbsp raw sugar,for topping
In a large bowl, add eggs, sugar and butter. Cream everything until fluffy.
In a separate bowl, add flour, salt and baking powder. Blend well.
Add Lemon zest and lemon juice to the egg mixture. Alternating the flour and milk, add flour to the egg mixture. Blend well but don’t over mix, it will make the muffin tough. Leave a bit of flour behind, add blueberries to the flour bowl and coat them with flour. Add blueberries to the muffin mixture.
Spray with oil the muffin pans, scoop mixture into the pans.
Top each muffin with raw sugar.
Bake in a preheated oven at 350 degrees for about 20 minutes. Enjoy!
QUEQUES DE MIRTILO E LARANJA
2 xícaras de farinha de trigo

1 xícara de mirtilo fresco ou congelado
½ xícara de leite
½ xícara de manteiga, temperatura ambiente

½ colher de chá de sal
1 raspa de limão
1 suco de limão
2 colheres de sopa de açúcar mascavo, para cobrir
Em uma tigela grande, adicione os ovos, o açúcar e a manteiga. Creme tudo até ficar fofo.
Em uma tigela separada, adicione a farinha, o sal e o fermento. Misture bem.
Adicione as raspas de limão e o suco de limão à mistura de ovos. Alternando a farinha e o leite, adicione a farinha à mistura de ovos. Misture bem, mas não misture demais, isso deixará o muffin duro. Deixe um pouco de farinha para trás, adicione mirtilos à tigela de farinha e cubra-os com farinha. Adicione os mirtilos à mistura de muffins.
Pulverize com óleo as forminhas de muffin, coloque a mistura nas forminhas.
Cubra cada muffin com açúcar bruto.

Makes 12 muffins
Ingredients:
For the muffins:
1¾ cups (220g) Plain flour
1/2 teaspoon Baking soda
2 teaspoons Baking powder
1/4 teaspoon Salt
3/4 cup (150g) Sugar
2 Eggs
1/2 cup (120ml) Buttermilk/milk or non-dairy milk
1/3 cup (80ml) Oil
1 teaspoon Vanilla extract
Lemon zest
1 cup Blueberries, fresh or frozen
For the crumble:
1/2 cup (50g) Sugar
1/3 cup (42g) Flour
3 tablespoons (45g) Butter, cold
1/2 teaspoon Cinnamon (optional)
Directions:
1. Make the muffins: Preheat the oven to 375F (190C). Grease 12 muffin cups or line with paper liners.
2. In a large bowl mix flour, baking powder, baking soda, salt.
3. In a separate bowl whisk egg and sugar until light and fluffy. Add milk, oil, vanilla extract and lemon zest. Whisk until combined.
4. Pour the wet mixture into the dry mixture and mix until combined. Add blueberries and mix just until combined.
5. Scoop the batter into muffin cups until 3/4 full.
6. Make the crumble (optional): Combine the ingredients for the crumble topping together in a small bowl and crumble together using your fingertips.
7. Sprinkle some crumble on top of each muffin batter. Bake for 20-25 minutes, until a toothpick inserted into the center comes out clean.
8. Allow to cool before serving.
