How To make Blueberry Cinnamon Rolls
1/4 c Milk
1/4 c Sugar
1/2 ts Salt
3 tb Butter or margarine
1 pk Dry yeast
1/4 c Warm water (105-115 degrees)
2 1/4 c All-purpose flour; divided
1 Egg
2 tb Butter or margarine;
-softened 1/4 c Brown sugar; firmly packed
1/2 ts Ground cinnamon
1/2 c Blueberries; fresh or frozen
1 tb Butter or margarine; melted
1 c Powdered sugar; sifted
2 tb Milk

Combine 1/4 cup milk, sugar, salt, and 3 tablespoons butter in a saucepan; heat until butter melts. Cool to 105 degrees to 115 degrees. Dissolve yeast in warm water in a large mixing bowl; let stand 5 minutes. Stir in milk mixture, 1-1/2 cups flour, and egg; beat at medium speed of an electric mixer until smooth. Stir in remaining 3/4 cup flour. Turn dough out onto a lightly floured surface, and knead until smooth and elastic (about 8 minutes). Place in a well-greased bowl, turning to grease top. Cover and let rise in a warm place (85 degrees), free from drafts, 1 hour (dough will not quite double in bulk). Punch dough down; turn dough out onto a lightly floured surface. Roll dough into a 12- x 8-inch rectangle; spread with 2 tablespoons butter. Combine brown sugar and cinnamon; sprinkle mixture over rectangle. Sprinkle with blueberries. Roll dough jellyroll fashion, starting at long side. Pinch seam to seal (do not seal ends). Cut roll into 1-inch slices; place slices, cut side down, in greased 8-inch square pan. Brush tops with 1 tablespoon melted butter. Using a fork, gently lift center of rolls to form a peak. Cover and let rise in a warm place, free from drafts, about 40 minutes (rolls will not double in bulk). Bake at 350 degrees for 35 minutes. Combine powdered sugar and 2 tablespoons milk, stirring well. -----

Blueberry Cinnamon rolls
Dough
* 1 cup Milk warm
* 1/2 cup unsalted butter (melted)
* 2 Large eggs room temperature
* 1 packet instant yeast
* 1 teaspoon Salt
* 1/4 cup castor sugar
* 3 and 1/2 cups flour
Blueberry sauce
* 2 cups fresh Blueberries
* 1 tablespoon Lemon juice
* 1/4 cup white sugar
Filling
* 1/4 cup sugar brown or white
* 2 teaspoon Ground cinnamon
* 4 tablespoon Unsalted softened butter
Cream Cheese Glaze
* 235g Plain Cream cheese room temperature
* 4 tablespoon Unsalted butter room temperature
* 3/4 cups icing sugar sifted
* 1 tablespoon vanilla essence
* 3 tablespoon Milk
Dough
* In the microwave, melt the butter in a bowl for 30 seconds mix well then set aside to slightly cool. Heat milk in microwave for 45-50 seconds.
* In a large bowl add the flour,sugar,salt and yeast then mix all the dry ingredients until combined.
* Slightly beat the eggs in a separate bowl then add milk,melted butter then add the wet ingredients to the dry ingredients.
* Knead dough for about 15-18 minutes till doesn’t stick to your hands and is slightly tacky.
* Form dough into ball then grease the same bowl with a few drops of oil then allow to sit in a warm place to rise and double in size.
* While the dough is rising prepare to make the blueberry sauce
* In a saucepan over medium heat, mix blueberries, lemon juice and sugar. Heat the blueberries until it starts to bubble and thicken, stirring occasionally. Using a fork crush the blueberries to release more of their juices cook until sauce thickens.
* Strain the sauce into a jar and allow sauce to cool while though rises.
* When the dough is done rising,In a separate bowl, mix together the sugar and cinnamon together. Set aside.
* Roll dough on a lightly floured surface. Roll into a rectangle. Use a silicone spatula or brush then generously spread the softened butter over the dough.Sprinkle the sugar/cinnamon mixture all over the rectangle. The entire rectangle should be covered.
* Spread the blueberry sauce on top,It should completely cover the dough.
* Roll the dough on the shortest side to get a lot of layers. Roll it very tightly and go slow.
* Spray a baking pan with baking non-stick spray or grease with butter.Place cut rolls into pan. Cover with kitchen towel and let rise for another 30 minutes.
* Use this time to preheat oven to 180 degrees Celsius.
Bake for 30-35 minutes. The tops of the rolls should be lightly golden brown. Let it cool for 15-20 minutes.
For the cream cheese glaze.
* Using a mixer, beat the cream cheese and butter together on high for 1 minute. It should be fluffy. Add in sifted powdered sugar. Mix on low until it is combined. Switch to high and mix until smooth.
* Add in vanilla essence then Mix until smooth. Add some of the blueberry sauce then mix lightly but not completely to form a ‘marble look’.
* Use a spoon to spread on top of the cinnamon rolls.
* Serve immediately or store in the fridge.
Tip.: Left over blueberry sauce can be used to top over on a bowl of oats,on pancakes or even served with ice cream.
