Combine 1/4 cup milk, sugar, salt, and 3 tablespoons butter in a saucepan; heat until butter melts. Cool to 105 degrees to 115 degrees. Dissolve yeast in warm water in a large mixing bowl; let stand 5 minutes. Stir in milk mixture, 1-1/2 cups flour, and egg; beat at medium speed of an electric mixer until smooth. Stir in remaining 3/4 cup flour. Turn dough out onto a lightly floured surface, and knead until smooth and elastic (about 8 minutes). Place in a well-greased bowl, turning to grease top. Cover and let rise in a warm place (85 degrees), free from drafts, 1 hour (dough will not quite double in bulk). Punch dough down; turn dough out onto a lightly floured surface. Roll dough into a 12- x 8-inch rectangle; spread with 2 tablespoons butter. Combine brown sugar and cinnamon; sprinkle mixture over rectangle. Sprinkle with blueberries. Roll dough jellyroll fashion, starting at long side. Pinch seam to seal (do not seal ends). Cut roll into 1-inch slices; place slices, cut side down, in greased 8-inch square pan. Brush tops with 1 tablespoon melted butter. Using a fork, gently lift center of rolls to form a peak. Cover and let rise in a warm place, free from drafts, about 40 minutes (rolls will not double in bulk). Bake at 350 degrees for 35 minutes. Combine powdered sugar and 2 tablespoons milk, stirring well. -----

jumbo blueberry “cinnamon roll” muffins????
It’s actually more of a bread than a muffin and it’s slightly more elevated than your classic cinnamon roll. Perfect for spring! These blueberry “cinnamon rolls” have a pillowy soft brioche dough and are rolled with a lemon blueberry filling. Top it with your favorite icing and you have yourself the ultimate sweet treat. FYI I felt adventurous and ended up braiding them but it got kinda messy so I recommend not doing that and just forming them into a classic cinnamon roll shape. Recipe makes 6 jumbo muffins
Dough:
200g whole milk
410g bread flour
45g sugar
5g instant yeast
3g kosher salt
5 tbsp room temp buter
1 large egg + 1 yolk
Blueberry filling:
200g frozen blueberries
85g sugar
Juice of half a lemon
Zest of 1 lemon
1/2 tsp cinnamon
1/2 tbsp corn starch + 1/2 tbsp water
1. The night before: in the bowl of a stand mixer with hook attachment, combine all dough ingredients except for the butter. Knead for 5-8mins until the dough comes together then add the butter and knead for another 5-10mins until it’s smooth. Form into a ball, cover and let rise for 1hr (it won’t be quite doubled in size) then transfer to fridge for an overnight proof
2. The next morning: in a small pot over medium heat, combine blueberry filling ingredients except for the cornstarch mixture. Cook for 5-10mins until the juices are released then transfer to a blender and puree until smooth. Return the filling back into the pot and add the cornstarch. Cook for another 5-8mins until it thickens. Remove from heat and let cool (it will thicken further)
3. Take the dough out of the fridge and roll it out to be 20”x18”. Spread the blueberry filling over the dough and then roll it into a log starting from the shorter end. Cut the log into 6 sections and place into a lightly greased jumbo muffin pan. Cover and let rise for 30mins-1hr
4. Preheat the oven to 350F and bake for 25-30mins until golden brown. Serve with your favorite icing!
