How To make Mom's Cinnamon Rolls
12 c Flour, all purpose
3/4 c Margarine
3 c Water
1 c Sugar
3 pk Yeast
1 1/2 tb Salt
3 Eggs
Brown Sugar 2 Sticks of Butter
These rolls have alot of layers due to how thin the dough is rolled out. Mrs. Schmidt says that beating the ingredients a real lot is what makes this come out well. There is also a trick to getting the sprinkled water just right, just a few drops, here and there. Sprinkle yeast in 3 cups of warm water with 1 tbsp. sugar, mix and let sit 10 min. Add 3 cups of flour and beat well with beater. Let rise until spongy (30 min.) Beat 3 eggs really well, 5 minutes (Frothy & Fluffy). Soften margarine and add 1 cup sugar and beat really, really well till very creamy. Add to eggs and beat till very well blended and add salt. Add egg mixture to sponge mixture. Add approximately four to 5 cups flour and beat with a beater really well till smooth. Continue adding flour until smooth to stir put the rest of the flour on a board and put the dough in the middle and knead. (You don't have to knead in all the flour-only until not sticky and easy to handle. Put the dough in a warm oven and cover with a damp cloth. Let rise until doubled (about 1 hour.) Fix pans for Rolls. Grease 2 large rectangular baking pans with margarine. Sprinkle liberally (not packed) (1/4" deep) with brown sugar and dot liberally with butter (1 stick per pan) Sprinkle very lightly with water to keep the sugar from burning and sticking. Punch down dough and let rise 1/2 hour more. Turn out and take 1/2 of the dough and roll out to 1/2" thick rectangle. Spread with soft butter (over all of rectangle) and sprinkle with sugar and cinnamon. Roll up jelly roll style, pulling to stretch dough while rolling. Cut roll into 1" thick slices. Place in pan-just touching (don't crowd) let rise (covered with a damp cloth) until above the pans. Bake at 325-350 for 20-25 min. -----

Mom's Best Recipes | Sticky Cinnamon Buns
STICKY CINNAMON BUNS
4 C warm water
2 T yeast
1 C potatoe flakes
4 beaten eggs
1 C butter salted
1 C sugar
11/4 T salt
10 C bread flour
Start oven at 350
Put yeast in with warm water set for 5 min.
Start to beat using mixer or by hand. Sugar, salt add 2 cups of flour. Beat in potatoes , butter and eggs.
Add rest of flour.
Dough is to be a little sticky. If to sticky to handle use oil instead of flour.
Oil a bowl for it to rise in.
Let rise for 30 min in warm area.
If to cool it will take longer.
Bottom goo
Prepare pans if using sheets . Put 1/4C melted butter 11/2C brown sugar 2T vanilla 3T water
If using other pans devided out recipe
Devide dough in 2 parts
Roll dough in rectangles.
Load up with butter
Sprinkle cinnamon and brown sugar on as you like.
Use pizza cutter and cut into 1 inch wide strips. Or how ever wide you want.
Roll up and place in pan on 1 in apart on your yummy goo!
Let rise 20 min.
Bake 20 min.
Cool to a point you can frost.
Frosting
4 C power sugar
1/2 C butter
1 T vanilla
1/4 cup water
Whip up using water as you go and test thickness you like.
These will make around 3 dozen depending on size.
If you dont have salted butter, use 1/4 tsp of salt to a stick
These freeze very well.

2 oz cream cheese, softened
7 tablespoons butter, softened
1/2 teaspoon vanilla extract (forgot to mention this)
2 tablespoons milk
1 1/2 cups confectioners sugar (powdered sugar)
1/4 teaspoon salt

Dough
4 1/4 cups (21 1/4 ounces) All-Purpose Flour
1/3 cup cornstarch
2 1/4 teaspoons instant or rapid-rise yeast
1 1/2 teaspoons salt
3/4 cup (6 ounces) Whole milk, Room temperature
3 large eggs
1/2 cup (3 1/2 ounces) granulated sugar
12 tablespoons (6 ounces) unsalted butter softened (I know I said 1 stick which was a mistake, it's 1 1/2 sticks)
Filling
1 1/2 cups packed light Brown Sugar (10 1/2 ounces)
1 1/2 tablespoons ground cinnamon
1/4 teaspoon salt
4 tablespoons (2 ounces) unsalted butter softened (this number is honestly bullshit because I ran out of butter immediately! It was closer to 1 stick
METRIC MEASURMENT
Dough
510 grams All-Purpose Flour
40 grams Cornstarch
7 grams instant or rapid-rise yeast
6 grams salt
175 ml Whole Milk, Room Temperature
3 large eggs
100 grams granulated sugar
170 grams unsalted butter softened
Filling
330 grams packed light brown sugar
8 grams ground cinnamon
2 grams salt
56 grams unsalted butter, softened (refer above)
Bake at 350 for 35 minutes on the middle rack rotating halfway through.
MOMS HOMEMADE CINNAMON ROLLS
2 1/2 cups white all-purpose flour
1 1/2 teaspoons salt
2 Tablespoons dry yeast
1 1/4 cups lukewarm water (95-105 F)
1/2 cup Vegetable oil
1/3 cup Light Brown sugar
2 eggs
3 cups Freshly ground Whole Wheat Flour
METRIC MEASUREMENTS
300 grams White all-purpose flour
6 grams salt
18 grams instant dry yeast
295 ml lukewarm water
120 ml vegetable oil
56 grams light brown sugar
2 eggs
360 grams whole wheat flour
Bake at 175 Celsius for 35 minutes
Combine yeast and water, mix well and let proof for 10 minutes
Combine everything else into a kitchenaid Bowl along with the yeast/water once its proofed
Mix together and add 1 cup of whole wheat flour. Allow to mix and slowly sprinkle in another cup. Begin to pay attention to the dough so you don't dry it out. Slowly add the last cup in small increments.
Knead until dough is smooth and elastic
Pour out onto an oiled counter and roll into 1/4 thick rectangle and divide into two.
Follow steps in the video before placing your oven rack to the middle and preheating oven to 350 degrees Fahrenheit. Bake for 25-35 minutes or until buns are golden brown.
