2/3 c Black beans; cooked until - tender and drained 1/2 bn Cilantro; chopped 1/2 c Corn 1/3 c Red bell peppers; seeded, - and diced the size - of the beans 2 tb Olive oil 1 Lime, juiced 2 ds Tabasco sauce (or to taste) Salt (to taste) Pepper (to taste) In a medium bowl place all of the ingredients and stir them together. Let the relish sit for 1 hour before serving it.

Ingredients:
2 Cups canned or boiled black beans 1 Cup corn (canned or frozen) 1/2 Chopped green bell pepper 1/2 Chopped sweet onion 1/3 Cup celery 1/3 Cup diced tomatoes 2-3 Tsps pink salt (OR sea/white salt) Handful chopped cilantro
For Dressing
3 Tbsp lemon juice 1 Tbsp olive oil chopped green chilies ( I used 2-3 Thai chilies. You can use any chilies/peppers - seeded or deseeded depending upon your preference)
Combine the ingredients - pour the dressing, add salt and mix well. Garnish with cilantro and avocado slices.
