Cooking With Tammy Seasoning:
1½ lbs sausage kielbasa, andouille, or smoke sausage, sliced
2 lbs baby potatoes or baby creamer potatoes
2 15 oz cans green beans, drained
⅛ cup vegetable oil
¼ cup butter
1 cup onions chopped
3 cloves garlic, or 2 tbsp garlic minced
1 tsp Cajun Seasoning
1 tsp Creole Seasoning
1 tsp garlic powder
1 tsp pepper
1/2 tsp salt
½ tsp red pepper flakes
Preheat oven to 400° and spray a 9×13 baking dish with non-stick spray.
Wash potatoes, if the potatoes are on the larger side, cut them in half and add to a bowl.
Add oil, seasonings, pepper, salt, and red pepper flakes. Toss to coat.
In a large frying pan, add sausage and cook over medium-high heat until sausages have browned.
Remove sausage from the pan into a bowl and reserve.
Melt butter in a frying pan and add onions and garlic, cook until onions are translucent and the garlic is fragrant.
Add the garlic mixture to the potatoes, along with the sausage and green beans, and combine.
Cover with foil and place in the oven. Bake for 40 minutes or until potatoes are tender.
Carefully remove from oven and enjoy!

Ingredients
{Topping}
•1 white onion thinly sliced
•2 tbsp whole wheat flour
•1 tbsp corn meal
• Pinch of salt & pepper
{Casserole}
•1lb fresh green beans
•8 ounces sliced baby bella mushrooms(optional, dice to small pieces
•1-1/4 cup plant milk
•2 tbsp whole wheat flour
•1 tbsp corn starch
•1 tsp garlic powder
•1/2 tsp onion powder
•1 tsp white miso paste
•1-1/4 cup vegetable broth

3 Tbsp olive oil
1 medium yellow onion
4 cloves garlic
optional: 1 chipotle pepper OR 1 Tbsp adobo sauce for less spice
2 tbsp tomato paste
1 ½ tsp each: chili powder, ground cumin, & smoked paprika
two 14-oz cans black beans
½ C vegetable broth or stock
1 lime, juiced
8-10 corn tortillas
6 oz Pepper Jack or melty cheese of choice, shredded

This easy pinto bean soup is hearty and nutritious and ready in just over half an hour. You can make it with just a couple of pantry staples for a delicious weeknight meal that's also super good for you.

Chicken Tortilla Casserole
1 Rottisorie Chicken - shredded
2 - 10 oz Can Rotel Original
1 - 15 oz Can Black Beans - drained
1 1/2 C Frozen Corn
1 C Chicken Broth
1 Tbsp Chili Powder
1 1/2 tsp Garlic Powder
1 tsp Cumin
1 tsp Salt
12 Small Corn Tortillas - cut into quarters
8 oz Block Monterey Jack - shredded
8 0z Block Cheddar - shredded
1/3 C Cilantro - chopped
1/2 C Sour Cream
1/2 C Red Onion - diced
In a large bowl mix together rotel, chili powder, cumin, garlic powder & salt. Add in black beans, frozen corn & chicken broth. Stir. Add in shredded chicken, 1/2 of the monterey jack & cheddar cheeses. Add your quartered corn tortillas and mix.
Lightly spray a 9 x 13 baking dish with cooking spray. Pour ingredients into bowl and spread evenly. Cover with foil.
Bake @ 350 for 25 minutes.
Remove foil and top with remaining cheeses.
Turn oven up to 400 and bake for 10 - 15 minutes or until cheese is melted.
Top with diced red onion & cilantro. Serve with sour cream if desired.
