My family is Sri Lankan, and every year, I use my Nanna's recipe (with family secrets her Grandma told her) to make our Sri Lankan Christmas Cake (also knowsn as Rich Cake). We eat it all year round (if it lasts that long!)
Every year, I try my hardest to bake the best cake, to make my Nanna proud, but Nanna passed on, a few months ago so I wanted it even more perfect, in memory of her...so when I mucked up, today & mixed in 25 whole eggs (not just egg yolks), I felt like I let her down...and I had a bit of a break down. But, I just went to the shops, bought more sugar, eggs & butter, then tried, again.

Today we will learn to make a vegetable puree, specifically carrot puree but just by swapping out the carrot you can make most purees using this method (beetroot puree, butternut squash puree, pea puree, celeriac puree, parsnip puree, cauliflower puree etc. I will also show you some plating purees ideas. Depending on the size of the carrots that you use, you may need to adjust the milk quantity slightly until you get a consistency that is thick enough to hold its shape when plating puree or puree plating.
You can use a blender for this recipe, however if you have a small smoothie or juice maker like I use here it will blend just as well

20g (1.5 tbsp) butter
120ml (1/2 cup) milk

5 Rote Beten (etwa 500g)
Butter zum einfetten
200 g Dinkelmehl
6 EL Kakaopulver
2 TL Backpulver
200 g Rohrzucker
100 g Zartbitter Schokolade
(in kleine Stücke gebrochen)
3 Eier
200 g festes Kokosöl/butter
Schoko-Glasur
3 EL Rohrzucker
3 EL Milch
75 g Zartbitterschokolde oder dunkle Kuvertüre
75 g Butter
optional Rote Bete Glasur
120 g Puderzucker
2 EL Wasser
1 TL Rote Bete Pulver

200 g of solid coconut oil / butter
Chocolate Glaze
3 tablespoons cane sugar
3 tablespoons milk
75 g Zartbitter Schokolade or dark chocolate
75g butter
optional beetroot glaze
120g icing sugar
2 tablespoons water
1 tsp beetroot powder
