How To make Coconut Oatmeal Cake
1 c Rolled oats
1 1/4 c Boiling water
1 1/2 c All-purpose flour
1 ts Baking soda
1 ts Cinnamon
1/4 ts Nutmeg
1/2 ts Salt
4 oz Butter
1/2 c Sugar
1 c Brown sugar
2 Eggs
1 ts Vanilla
5 oz Butter
2/3 c Brown sugar
1/4 c Light cream
2/3 c Walnuts or pecans
1 c Coconut; shred, pack
CONFIT OF APPLES 1/2 c Unsalted butter
1 c Sugar
2 tb Brandy
2 ts Lemon juice
4 Granny Smith apples; peel,
-halve, core Place oats in a bowl. Add boiling water and let stand 20 minutes. Cream butter, sugar, then eggs and vanilla. Add rolled oats. Add dry ingredients. Bake at 350 for 40 minutes. Top with coconut topping and broil until golden brown. TOPPING-Cream butter then add sugar. Stir in cream, nuts and coconut. Garnish with apple confit and taffy apple. CONFIT OF APPLES-In a saute pan on medium, melt the butter then stir in the sugar. Simmer, stirring occasionally until it begins to turn golden brown and caramelized. Add brandy and lemon juice to the pan and simmer to incorporate. Place apples in caramel and cook slowly to caramelize and tenderize. Serve warm. Source: Bakers' Dozen, Gale Gand, TVFN. Ingredients:
2¼ cups (200g) Rolled oats
1¼ cups (100g) Quick oats
1/2 (170g) cup Honey/maple syrup
1 1/3 cups (270ml) Milk
2 Egg
1½ teaspoons vanilla extract
3 tablespoons (40g) Coconut oil
1 teaspoon Baking powder
1/4 teaspoon Salt
1 teaspoon Cinnamon
50g Dried cranberries
50g Raisins
50g Dried apricots
Butter for greasing
Directions:
1. In a large bowl mix all the dry ingredients and set aside.
2. In separate bowl, whisk all the wet ingredients.
3. Pour the wet mixture over the dry ingredients and mix until combined. Let sit for 15-20 to absorb the liquids.
4. Preheat the oven to 360F (180C). prepare 8-inch pan – line with parchment paper and grease the edges with butter.
5. Pour the batter into the pan and bake for 35-40 minutes or until golden brown.
6. Let cool on a wire rack for 10 minutes, then Release from the pan and let cool completely
Notes:
• All the ingredients should be in room temperature.
• You can use any kind of dried fruits.

FOR THE CAKE
- 1 cup old fashioned oats
- 1 1/4 cups boiling water
- 1/2 cup unsalted butter, room temperature
- 1 cup white sugar
- 1 cup light brown sugar
- 2 eggs
- 1 teaspoon vanilla
- 1 teaspoon cinnamon
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups flour
FOR THE FROSTING
- 1/2 cup butter
- 1/2 cup light brown sugar
- 1/4 cup heavy cream
- 1 cup shredded coconut
- 1 cup chopped pecans
- 1 teaspoon vanilla
- 1/2 teaspoon salt
FOR THE CAKE
Preheat oven to 350 degrees.
Pour boiling water over oats in a small bowl and let it steep two minutes.
While the oatmeal is steeping, cream the butter and sugars until light and fluffy, 3 minutes.
Add eggs and vanilla. Mix to incorporate and scrape the sides of the bowl to ensure even mixing.
Pour in slightly cooled oats and water and mix 1 minute.
Add cinnamon, baking soda, salt, and flour. Mix until there are no dry streaks.
Grease a 9x13 baking dish with nonstick spray and pour batter into dish.
Bake until set and a light golden color. A skewer inserted into the middle of the cake should come out mostly clean, 35-40 minutes.
While baking, prepare the frosting.
FOR THE FROSTING
Melt the butter. Add brown sugar, cream, coconut, nuts, vanilla, and salt. Stir together to combine and set aside until the cake is ready.
When the cake is removed from the oven, turn the broiler to high.
Evenly spread the prepared frosting over the hot cake. Place under broiler. Do not walk away as this is a very quick process. Allow the frosting to caramelize and turn golden brown, 1-3 minutes.
Remove from oven and cool for 15 minutes.
