How To make Fruited Coconut Cake
1 pk Yellow cake mix
1 pk Jell-o instant pudding
= (lemon or vanilla) =4 serving size 16 oz Fruit cocktail
2 1/3 c Coconut
4 Eggs
1/4 c Oil
1 1/2 c Firmly packed brown sugar
1/2 c Nuts; (optional)
1/2 c Butter or margarine
1/2 c Sugar
1/2 cn Evaporated milk
Combine cake mix, pudding mix, fruit cocktail with syrup. 1 cup of coconut, eggs and oil in large mixer bowl. Blend, then beat at medium speed for 4 minutes. Pour into greased and floured 13x9 inch pan. Sprinkle with brown sugar and nuts. Bake 324 for 45 minutes, or until cake is done. (Do not under bake). Cool 15 minutes. Combine butter, granulated sugar and milk in saucepan. Bring to a boil and boil for 2 minutes. Remove from heat. Stir in remaining coconut. Spoon warm sauce over warm cake. Serve warm or cool, with whipped topping, if desired.JM. I got this recipe out of the EASY HOMEMADE DESSERTS (Using Jell o Pudding). It was published in 1959. I have about worn it out. Ingredients
1. 3/4 Cup Fruit Mix ( Black Raisins /Cherry/Tutti Fruit)
2. 2 Tsp Almonds
3. 2 Tsp Cashew Nuts
4. 2 Tsp Apricot
5. 2 Tsp White Raisins
6. 1 Small glass of orange Juice.
7. 2 Cups All Puprose Flour ( Maide)
8. 1 Cup Sugar
9. 2 Cloves
10. 1/2 Inch Cinnamon
11. 1/2 Tsp Baking Soda
12. 1 Tsp Baking Powder
13. 1/4 Tsp Salt
14. 1/4 Cup Oil(Refined Oil) or Butter
15. 3/4 Cup Yogurt
16. 1 Tsp Coca Powder
17. 1/4 Tsp Vanilla Essence
18 . Orange ( Fresh Orange Juice)
Process
1. Add Fruit Mix ( Black Raisins /Cherry/Tutti Fruit) Almonds,cashew Nuts,Apricot,White Raisins into bowl
2. Add Orange Juice or We can use Grape Juice and Mix it well.
3. Close the bowl with lid and soak it for 8 Hours.
4. Remove the lid after 8 Hours
5. Check Fruits are soaked well.
6. Add Cinamon, Cloves, Cardamom, sugar into Mixer Jar and blend it
7. Now Sugar Powder is ready .
8. For Caramel Syrup heat the pan and add 2 tsp sugar
9. Melt it on low flame
10. Add 4-5 Tsp of Water
11. Turn off the flam and transfer the caramel syrup into bowl
12. Pour Some salt into cooker and place the stand and Preheat the cooker.
13. Add Oil into mixing bowl ( We can use butter instead of Oil )
14. Add Yogurt
15. Sieve Sugar powder and add it and Mix it well.
16. All Purpose Flour(maida) , 1 tsp baking Powder , 1/2 tsp baking soda and sieve into mixing bowel
17. Add 1/4 Tsp salt
18. Add 1 tsp Coca Powder
19. Mix All ingredients well
20. Mix Cut & Fold method.
21. Add Caramel Syrup
22. Now Add Soaked dry fruits
23. Mix Cut & Folder Method
24. Add 1/4 Tsp Vanilla Essence
25. Add Chopped Almonds and Cashew Nuts and Mix it.
26. Grease the cake mould
27. Sprinkle Maida
28. Transfer the cake batter into cake mould
29. Tap the mould 2-3 time for remove the air babbles
30. Keep the cake mould into cooker
31. Close the cooker
32. After 30 Mints open the lid and garnish the cake with cashew Nuts and Almonds and close the lid.
33. Baking it will take around 1 Hour
34. Check it once the cake is baked well using the tooth pick or Knife.
35. Cake baked well remove from cooker and allow to cool .
36. Run a knife on sides of the mould
37. Unload the same in to plate .
38. Now Cake is ready - Enjoy the Cake

CAKE BATTER
Mixture 1:
5 egg yolks
1/2 cup granulated sugar
1/3 cup milk
1/4 cup vegetable oil
1 tsp vanilla extract
1 cup cake flour
1 tsp baking powder
Mixture 2: Meringue
5 egg whites
1/2 cup granulated sugar
FILLING
2 1/2 cups dice fruits of choice
WHIPPED CREAM FROSTING (double the ingredients below for 8” cake)
2 cups cold heavy whipping cream
1 cup confectioners sugar
1 Tbsp dry vanilla pudding mix
Piping tips: 1M and 789
Supplies: turn table, cake board, offset spatula, edge scraper, smoother comb, pipping bags, baking pan 8” x2, and parchment paper

Traditional fruit cake is a timeless classic that every household in this time and era should be able to make, it has quite a history but you will be able to catch a small glimpse of that in the video if you watch, here are the ingredients used and for method please follow video .

Margarine 250g
