Smothered Pork Chops Recipe + Homemade Gravy and Caramelized Onions
These smothered pork chops are pan-roasted to perfection and then simmered in a delicious caramelized onion gravy and finished with fresh herbs.
This classic southern dish is the epitome of comfort food. It’s an incredibly easy to make one-pan meal consisting of pork chops, caramelized onions, and a homemade gravy that makes for the perfect weeknight meal.
Ingredients for this recipe:
• 4 thick-cut bone-in pork chops
• 1 ½ tablespoons oil
• 1 tablespoon unsalted butter, cut into chunks
• 3 peeled and thickly sliced medium-size yellow onions
• 3 finely minced cloves of garlic
• 3 tablespoons all-purpose flour
• 32 ounces chicken stock, beef stock, or combination of both
• ¼ cup heavy whipping cream
• sea salt and pepper taste
Serves 4
Prep time: 10 minutes
Cook Time: 20 minutes
Procedures:
1. Season the pork chops well on each side with sea salt and fresh cracked pepper to taste.
2. Add the oil into a large frying or cast-iron pan over high heat until it begins to lightly smoke.
3. Next add in the pork chops and butter and turn the heat down to medium-high and cook for 3-4 minutes or until very browned.
4. Turn the pork over, baste, and cook for another 3-4 minutes and set aside.
5. In the same pan turn the heat down to medium and add in the onions and cook for 5-7 minutes or until lightly browned.
6. Next, stir in the garlic and cook for 1 to 2 minutes.
7. Stir in the flour until completely mixed in and then add in the stock and turn the heat up slightly to medium-high and cook until it becomes thick like gravy, about 3-4 minutes.
8. Add the pork chops back in the pan to heat them up and finish by stirring in the heavy cream.
9. Garnish with optional finely minced fresh parsley, rosemary, and thyme.
Chef Notes:
Make-Ahead: While these are meant to be eaten right away, you can make these up to 1 hour ahead of time, just keep the pork chops in the gravy over very low heat.
How to Store: Cover and keep in the gravy in the refrigerator for up to 4 days. These will freeze covered in the gravy for up to 3 months. Thaw in the refrigerator for 1 day before reheating.
How to Reheat: Add the desired amount of pork and gravy to a medium size pan and cook over medium-low heat until warmed, which takes about 10 minutes. You can also reheat in a microwave.
You can use chicken stock, or beef stock, or a combination of both like I did.
I prefer to use double thick-cut bone-in pork chops for the most flavor. You can easily substitute with thin cut pork chops, pork loin, or pork tenderloin.

OLD SCHOOL SMOTHERED PORK STEAKS
This is a nice easy recipe for the most tender,juicy and delicious pork steaks u ever eaten
OLD SCHOOL SMOTHERED PORK STEAKS
8 pieces pork steaks
1 whole onions SLICED
4 cup chicken or beef stock
Season pork steaks with salt and pepper
Gentle flour chops and brown in in dutch oven
Remove browned chops and place on a pan
In the pot Saute onions until brown and tender
Add 4-6 tablespoons flour onions in pot and cook until medium brown color
Add 4 cups chicken stock or beef stock
Cook an additional 5 minutes until flour taste is gone
Season to taste with salt and pepper
Add pork chops back in pot and cook in oven until tender on 350 degrees for 2 hours

Juicy Smothered Pork | Ready in 25 Mins!
Don't settle for dry pork steaks!
Juicy pork shoulder steaks in a creamy sauce with mushrooms and onions. A 25-minute one-pan meal - great for a weeknight dinner. You can also use pork chops or pork loin for this recipe!

Ingredients:
3 tbsp olive oil
4 boneless pork shoulder steaks
1/2 tsp salt
1/2 tsp black pepper
1 onion peeled and thinly sliced
6 mushrooms sliced (I like chestnut mushrooms, but use your favourite)
3 cloves garlic minced
2 tbsp plain (all-purpose) flour
360 ml (1 ½ cups) chicken stock
1/2 tbsp tomato puree
1/2 tbsp white wine vinegar
60 ml (¼ cup) double (heavy) cream
To Serve:
2 tbsp freshly chopped parsley
Instructions:
1. Heat 2 tbsp of the oil in a large frying pan over a medium-high heat.
2. Sprinkle both sides of the pork steaks with ¼ tsp of the salt and ¼ tsp of the pepper.
3. Place in the pan and fry for 6-7 minutes, turning once, until browned. Remove from the pan and place on a plate.
4. Add the remaining 1 tbsp of oil to the pan.
5. Add in the sliced onion, sliced mushrooms and the remaining ¼ tsp each of salt and pepper.
6. Fry for 5 minutes, stirring often, until the onions have softened.
7. Add the 3 minced cloves of garlic. Fry for a further minute, whilst stirring.
8. Sprinkle the 2 tbsp of flour over the onions and mushrooms and stir together to coat.
9. Pour in the 360ml (1 ½ cups) of stock whilst stirring.
10. Add in the ½ tbsp of tomato puree, ½ tbsp of white wine vinegar and the 60ml (¼ cup) of cream and stir again.
11. Add the pork steaks back to the pan and simmer for 10 minutes to thicken the sauce and heat the pork steaks through.
12. Serve topped with a sprinkling of fresh parsley.

Growing up in the southern USA I ate a lot of liver and onions. If you didn't grow up eating liver and onions, the idea probably doesn't sound very appealing, but it's worth giving a try if you're at all curious. Here's
a simple liver recipe with just a little oil, seasoning, hint of flour, and a whole lot of onion. This liver recipe cooks up quickly. The onions take a little more time, but even so, it's a quick and easy dish to prepare. And liver is a superfood, for reals.

What you need for this Liver and Onions Recipe
BEEF LIVER (buy skinned and deveined liver, and thicker cuts are easier to handle)
ONIONS (lots of onions)
FLOUR (just a light dusting, use almond flour for a gluten free recipe)
SALT
PEPPER
COOKING OIL
How Cook Liver and Onions
Wash and pat dry the liver.
Cut liver into palm sized pieces for easy handling in the skillet.
Bread liver lightly with seasoned flour.
Heat oil in a skillet on medium heat.
Add liver and cook about 2 minutes on each side, or until liver if firm, but still slightly pink inside.
Remove liver and place on a paper towel.
Add onions to the skillet and saute until carmelized.
Return liver to the skillet and heat through with the onions.
Plate liver and top with onions.

Tips for Buying and Cooking Liver
Buy paler liver for milder flavor. The darker the liver, the stronger the flavor.
Calf liver is milder, but more expensive than beef liver.
Buy de-veined liver; this will reduce some of the chewiness.
If you can't find liver in your butcher's meat case, check the frozen section. Beef liver is often sold frozen.
You can marinate beef liver in milk for a milder flavor.
Cook liver until it is firm, but still slightly pink inside. Overcooked liver can be chewy.

It is packed with vitamins B12 and A.
Liver is high in iron, zinc, copper, and folic acid.
Liver is an excellent source of protein.
Eat liver to prevent or treat anemia.
