INGREDIENTS
Marinating
12 oz (340 g) beef flank steak (or flat iron, chuck, tri tip)
1 tablespoon doubanjiang
1/2 teaspoon Shaoxing wine (or dry sherry)
1/2 teaspoon dark soy sauce (or soy sauce)
1/8 teaspoon white pepper
1 teaspoon cornstarch
1/4 teaspoon baking soda
2 teaspoons peanut oil (or vegetable oil)
Stir Fry
1 1/2 tablespoon peanut oil (or vegetable oil)
1 thumb ginger, minced
3 (total 8 oz / 225 g) cubanelle peppers (or anaheim peppers), cut into matchsticks
1 long red Asian chili pepper (or other type of hot pepper), sliced in rounds (Optional)
1 teaspoon light soy sauce (or soy sauce)
1/2 teaspoon sugar
1/4 teaspoon salt

Scotch bonnet - 2 balls
Corn starch - 1 tsp.
Onion powder, garlic powder, cayenne pepper - 2 tsp each
oyster sauce 4 tbsp.
For the egg rice, you need
Precooked rice - 2 cups
Raw eggs - 4
Seasoning - 1 tbsp

Japanese chef cooks Shredded Beef with Green Pepper
【recipe】
Sliced pork loin 100g
Bamboo shoot 50g
Green pepper 3 pieces
White scallion 15cm
・seasonings for pork
Egg 1 piece
Salt a pinch
Sake 1 tsp
Vegetable Oil 1 tsp
Black pepper a pinch
Potato starch 1+1/2 tbsp
・seasonings
Sugar 1/2 tbsp
Sake 2/3 tbsp
Oyster sauce 1/2 tsp
Soy sauce 1 tbsp
Black pepper a pinch
Chicken broth mix a pinch
① Slice green peppers. Cut a bamboo shoot long and thin. Cut pork loin long and thin. Season the pork with salt, black pepper, sake, egg, potato starch and vegetable oil.
② Put oil in a pan. Cook the pork until they change color. Add the green pepper and bamboo shoot. Cook them until the vegetable is soft. Add all the seasonings and minced scallion. Ready to serve when everything is well blended.

How to make perfect Chinese crispy Shredded beef
Ingredients
½ Lb Sirloin/rump steak
1 Egg
1 Cup Corn starch/Potato starch
½ Onion
½ Bell Pepper
1 Medium Carrot
Oil for frying (Soy Bean or Vegetables)
Beef Marinate
1 Tsp Light soy sauce
1 Tsp Sesame oil
2 clove garlic chopped/paste
½ inch Ginger chopped/granted
½ Tsp Sugar
¼ Tsp White pepper
Stir Fry Sauce
2 Tbsp Light soy sauce
1 Tsp Dark soy sauce
2 Tbsp Honey
2 Tbsp Fresh lemon juicy
¼ Tsp Salt ( To Taste)
1 clove garlic chopped/paste
½ inch Ginger chopped/grated
USEFUL TIPS:
- HOW TO CHOOSE MEAT:
I recommend to use nice tender beef steak because it cooks quicker and more tender results, such as Rump steak, sirloin, you can also use, pork, chicken or any of your favorite meat cut.
In this recipe I use Sirloin Tip steak (Great for fajita too).
To make perfect crispy and tender beef, always cut the beef against the grain into thin strips.
Then marinate the beef with light soy sauce, sesame oil, garlic, ginger, sugar and white pepper.
(You can also add 1/4 Tsp baking soda if you use tough cut beef)
- BEEF COATING
If you want to know how to make perfect Chinese crispy beef batter and stays crispy, Corn starch, potato starch(flour) or rice flour is always works for me.
Break one egg in the beef marinate before coating with flour to keeps the meat moist and velvety.
Can I use plain flour? Sure, but plain or all purpose flour can’t make the coating stay crispy and it often soften the meat texture when you toss it in the sauce)
- STIR FRY SAUCE
In this stir fry crispy beef Chinese recipe doesn't use a loads of sauce, you will need only 4 simple ingredients, light soy sauce, honey, fresh lemon juice and salt.
If you wish to make more saucy/sticky sauce, add 1 teaspoon of corn flour and 2 tablespoon of water in the sauce mixture. You can also add extra dry chillies or fresh chillies and sweet chili sauce, If you prefer more sweet and spicy.
