How To make Armenian Potato Salad with Red Onions and Green Pepper
3 lb Red-skinned potatoes
1 md Red onion, thinly sliced and
-separated into Rings 1 Green pepper, seeded and
-finely chopped 3 tb Minced fresh parsley
Juice of 1/2 lemon 1/3 c Olive oil
salt, pepper and cayenne pepper to taste Boil potatoes in their jackets until barely tender. Cool enough to handle, cut into generous bite-size pieces while still warm. Place potatoes in a large salad bowl along with onion rings and green pepper; mix well. Add parsley and lemon juice; carefully toss again. Dribble oil over the vegetables and season to taste with salt, pepper and cayenne pepper; toss and set aside for several hours for salad ingredients to mellow. If refrigerated, bring to room temperature before serving. (Goes well with roasted lamb, chicken or simple fish recipes). Serves 8 to 12. From: CLASSIC COLD CUISINE by Karen Green, Jeremy P. Armenian Kotlet
2 1/2 pounds of ground beef
1/2 medium sized potato. (Shred the potatos)
a few sprigs of parsley (finely chopped)
1/2 green bell pepper (finely chopped)
3-4 cloves of garlic. (minced)
1/2 medium size white onion (finely chopped)
1/4 cup of bread crumbs
Mix everything together
Shape it
Coat it with bread crumbs
Put it in the refrigerator and let it marinate for 1/3 hour or so.
Fry it in a vegetable oil
Oven Rosted Potatos
Potatos as much as you want
Cut into equal cubs
Put it in a pot
Add some water and salt
Bring it to a boil
Do not cook. Just bring it to a boil.
As soon as it starts to boil turn off the heat and drain the water
Add seasonings to your taste
Salt, black and red peppers, 1 tea spoon oregano, 2 tea spoon bread crumbs and extra virgin olive oil
Mix it all together and place it on a cookie sheet and roast it in a preheated 375 degree oven
Garden Salad
2 midum size Tomatos
1 cucumber
small colorful peppers
a few sprigs of parsley
a few sprigs of mint
a few sprigs of basil
1/4 white or red onion
salt, red and black pepper to your taste
extra virgin olive oil to your taste
Cut Tomatos, peppers and cucumber into equal sizes. Chop the herbs. Add the seasonings and olive oil and toss everything before you serve it.
