Hello my friends, hope everyone had an amazing weekend. Today I was making my potato salad and I thought I would share it with all of you. This salad is one of my favourite salads to have in the summer, although you can have it any time of the year. It's light, it's vegetarian, it's vegan and most of all it's so delicious. Hope you guys give this recipe a try and let me know how it turned out and how you liked it.
To make this salad you will need:
Armenian Potato Salad
8 Yukon Gold Potatoes (Boiled and Peeled)
1 bunch of parsley (chopped)
1 bunch of green onions (or 1 lg. sweet onion, chopped)
1 Jalapeno pepper (or any pepper other hot pepper)
1/2 cup Extra virgin olive oil
1/2 cup of lemon (or juice of 2 med. lemons)
Salt to taste
1 tsp. Paprika
1 tsp. dried mint
1 tsp. cumin
1 tsp. cayenne (optional)
1 tbsp. sumac (optional, you can substitute lemon zest)
Direction:
Wash and boil the potatoes, peel them and a trick I do is put them in the fridge for few hours so when I come to cube them they don't fall apart. Wash and chop your green onions and parsley. In one bowl, put your cubed potatoes, the chopped parsley and onions, add the spices and salt according to your taste or diet restriction. If using jalapeño add it into the potato mixture or you can omit it if you don't like spicy. Add your oil and lemon juice, give it a good mix with a spoon or a spatula, taste it to see if you need more salt or lemon and that's it you guys. Simple easy and yummy.

ARMENIAN BULGHUR SALAD
INGREDIENTS
1 large Pomagranit / seeded
1 large Red Onion /finely diced
1 large Red Bell Pepper / finely diced
4 to 5 large cloves of Garlic / minced
1 very large or 2 medium red Tomatoes - or 2 cups / chopped
1 cup warm Water
1 1/2 c fine #1- Bulghur
1 to 1 1/2 large Lemon / the juice and the zest, mix with the garlic.
8 to 10 Scallions (green onions ) chopped
1/2 bunch fresh flat leaf Italian Parsley / chopped
1/2 c ( or little less of )light Extra Virgin Olive Oil
Spices...
1 to 2 tsp. of Salt / or to taste
1 tsp.Dry Mint / or more
1 tsp. Aleppo Pepper
1/8 tsp. Ground Cayenne Pepper
INSTRUCTIONS...
Add the diced garlic to the lemon juice and set aside.
In a large sauté pan over medium high heat, warm the olive oil then cook the onions and green pepper just until the onion begins to soften, about 5 to 8 minutes.
Add the garlic and cook for couple of minutes. Add the chopped tomatoes, salt, Aleppo pepper, cayenne pepper, mint, and cook covered on low heat for about 6 to 8 minutes.
In the meantime, add the warm water to the bulghur, the lemon juice with the garlic,the zest , parsley and the scallions. Make sure to leave a little aside from the parsley and scallions, for sprinkling on top, and also with the pomagranit.
Now , remove the pan from the heat.
Open a well in the center of the BULGHUR salad, and carefully pour the hot sauce in the center. Using a spoon, carefully while fluffing it mix together until all the BULGHUR is coated.
Cover with a lid and throw a towel over it and let it rest for about 15 minutes.
After the 15 minutes, allow to cool off to room temperature.
Fluff it out again. Taste!
If anything needs to be added? Then add now ????????????
Refridgerate !!
When serving ?
Top with green onion, fresh parsley, and pomagranit and a drizzle of extra virgin olive ( optional ) before serving.

1 Medium Bag of yellow potatoes (or your choice)
- Boil and then peel & cut into cubes .
*You can serve it warm or cold.
1/2 cup finely chopped parsley (curly or flat leaf)
3 to 4 green onions chopped
1/4 cup chopped red pepper to add color
1 TB sp Dried Mint or fresh chopped * If u don't have. * Optional
1 TB sp Sumac *Optional
1/2 to 1 TB sp Salt to taste
3 - 4 TB sp fresh lemon juice
1 Tsp. Red pepper flakes or cayenne pepper if u like spices * Optional
1/4 cup Olive oil
Mix & Serve ????
If potatoes are large, add more ingredients if desired.

Vegan Potato Salad
This is a recipe for the best vegan Mediterranean/Middle Eastern potato salad. If you don't like mayonnaise or are cutting out extra unhealthy fat this is a great substitute. Or if you want a simple alternative to the typical potato salad then this Middle Eastern Lebanese style potato salad is a winner! If you like the flavor of Tabouli then this kind of has a similarly same taste with the added potatoes. This is a very easy potato salad to make and once you taste this potato salad your tired mayonaise based potato salad will be forgotten all about! Try this and you'll know what I'm talking about.
You will need
9 Potatoes about 2.5 pounds boiled
1 bunch of parsley - Italian or Curly
2 bunch of green onions
1 bunch of mint
3 tomatoes
2 serrano peppers (substitue jalapeno or bell peppers)
3 lemons juiced
1 cup of olive oil
1 teaspoon salt
1/2 a teaspoon black pepper
1 teaspoon Aleppo pepper (or red chili pepper powder)
1 teaspoon cumin
Wash potatoes and put them in a big boiling pot. Fill it up with water and season the pot with a tablespoon or so of salt for taste. Boil potatoes until you can stick a fork into the potatoes easily. Once the potatoes are boiled take them out and set aside to cool off. Once potatoes are cooled off peel all the skins off the potatoes and set them aside.
Next chop the parsley, mint, green onions, tomatoes, peppers and put them into a large bowl. Next chop the potatoes and add to the bowl. Add the lemon juice and spices on top. Later add the olive oil to the potato salad and mix nicely until all ingredients are blended nicely together.
And that's it. Serve and enjoy!
