How to me mom’s tasty Armenian potato salad - I’m sure you will never make the mayonnaise based version again! My daughter always asks for Nana’s potato salad and I love making it for her when she visits! It is the perfect side dish for any time of year! Adjust the seasonings, lemon and olive oil after you mix all of the ingredients to suit your taste. I like a lot of olive oil and lemon but you may want to add less. Mom’s Armenian Potato Salad
Ingredients
3 Pounds Yukon gold potatoes or other white potato variety (avoid starchy potatoes, like Russets, because they will fall apart instead of maintaining their shape.
1 bunch green onions, 1 1/2 cups chopped
1 cup chopped curly or flat leaf parsley
1 ½ lemons freshly squeezed to taste
1 and 1/8 tsp salt to taste
1/2 teaspoon ground black pepper to taste
Pinch or two of ground white pepper
Pinch of fine red pepper
1/3 cup good quality extra virgin olive oil to taste
Directions
1. Boil potatoes in their jackets until barely tender. When cool enough to handle but still warm, cut into generous bite-size pieces.
2. Place potatoes in a large salad bowl along the green onions, parsley, and lemon juice; carefully toss again. Dribble oil over the vegetables and season to taste with salt, pepper and cayenne pepper; toss and set aside for several hours for salad ingredients to mellow. If refrigerated, bring to room temperature before serving.

1 tsp salt
1 piece of ginger

2 red chilies
1 tbsp vinegar
2 tbsp soy sauce
1 tbsp red chili flakes
1/2 tsp black pepper
1 tsp sugar
50ml water

This easy chopped tomato, cucumber, and onion salad is reminiscent of an Israeli salad made with diced tomatoes, cucumbers and lots of parsley. For the salad dressing, use vinegar or fresh lemon juice. Since we add raw onions to our salad, the sweeter the onions, the better. If you can find them, try Walla Walla onions or Vidalia onions. This is one of our favorite salad recipes!

What you'll need:
2 cups bulgur
2 cups of smashed potatoes (12-13 medium sized potatoes)
1 onion
1 batch of parsley
3 tsp pepper paste
1 1/2 tsp tomato paste
1 tsp cumin
2 tsp red pepper flakes
1/2 - 3/4 cup olive oil
Salt to taste

Armenian Potato Salad ????????
1 Medium Bag of yellow potatoes (or your choice)
- Boil and then peel & cut into cubes .
*You can serve it warm or cold.
1/2 cup finely chopped parsley (curly or flat leaf)
3 to 4 green onions chopped
1/4 cup chopped red pepper to add color
1 TB sp Dried Mint or fresh chopped * If u don't have. * Optional
1 TB sp Sumac *Optional
1/2 to 1 TB sp Salt to taste
3 - 4 TB sp fresh lemon juice
1 Tsp. Red pepper flakes or cayenne pepper if u like spices * Optional
1/4 cup Olive oil
Mix & Serve ????
If potatoes are large, add more ingredients if desired.
