Shopping List:
1 lb hot or mild Italian sausage
1 onion diced
3 cloves minced garlic
6 cups chicken stock
1 cup heavy cream
5 slices bacon
2-4 russet potatoes
3 handfuls chopped kale
2 tbs better than bouillon roasted garlic
1/4 cup parmesan cheese
salt, pepper, garlic, onion powder, Italian seasoning, red pepper flakes
Directions:
In a large pot over medium heat, cook bacon. Remove bacon when finished and reserve for later.
Next, cook sausage, breaking up with the back of a wooden spoon, until browned and no longer pink, 5 to 7 minutes. Transfer to a plate to drain.
Add onion and roasted garlic base to the drippings in the pot and cook until soft, then add garlic and cook until fragrant, 1 minute more.
Add chicken broth and potatoes and cook until potatoes are tender, about 20 minutes. (Fork tender)
Stir in kale and heavy cream and bring to a boil. Then, reduce to a simmer and let cook until leaves are tender and bright green. Season with salt, pepper, garlic, onion powder, Italian seasoning, and red pepper flakes to taste. Garnish with shredded parmesan.
Sausage/Beef Barley Soup. Easy to make family meal
This was a great soup that we loved! Here is the recipe from the book and how I changed it up. I put my changes in parentheses. ( ) Let me know it the comments below what your favorite soup is.
3/4 lb gr. beef (about 1/2-3/4 lb gr. pork) 1 1/2t dried thyme
4 C water 1 t garlic powder (1T)
1 can stewed tomatoes (Rotel) 1/4t black pepper (1/2t)
1 1/2C thinly sliced carrots 1 t dried oregano
1 C chopped onions 1/8 t salt
1/2 C quick-cooking barley 3 cups torn stemmed spinach
1 1/2t beef bouillon granules (Chicken) ( I omitted this)
1. Brown beef (and sausage) in a saucepan over medium-high heat until cooked. Drain fat.
2. Stir in water, tomatoes, carrots, onions, barley, bouillon, and all spices. Bring to a boil over high heat.
3. Reduce heat to low; cover and simmer 12 to 15 minutes or until barley and vegetables are tender, stirring occasionally. Stir in spinach; cook until spinach starts to wilt.

Ingredients:
1 large Onion, chopped
2 Celery stalks, chopped
2 medium Carrots, diced
2-3 Garlic crushed, crushed
2 tablespoons Olive oil
1 teaspoon Cumin
1 teaspoon Dried oregano
1 teaspoon Paprika
Salt to taste
Pepper to taste
1 can (14oz/400g) Diced tomatoes/chopped tomatoes
8 cups (2L) Vegetable stock
2 cups (380g) Dried lentils, rinsed
2-3 tablespoons Parsley/coriander, chopped
2 tablespoons Lemon juice, fresh
Directions:
1. In a large pot heat olive oil, add chopped onion and sauté for 6-7 minutes, until slightly golden. Add chopped celery and diced carrots, cook for 4-5 minutes, until tender. Add crushed garlic, cumin, dried oregano, paprika and cook, stirring for 1 minutes.
2. Add minced/chopped tomatoes and cook for 1-2 minutes.
3. Add rinsed lentils, vegetable stock, salt and pepper. Bring to a boil over high heat, then, reduce the heat to low, cover with a lid, and simmer for 30-45 minutes. Check the seasoning and add salt/pepper if needed.
4. Add chopped coriander/parsley, lemon juice, give a quick stir and turn the heat off.
5. Serve!
