What to make with...KIELBASA sausage | 3 easy recipes using Kielbasa
If you keep kielbasa sausage on hand, I've got 3 recipes for you to make! I almost always have some sort of smoked sausage or chicken sausage in the freezer, so these meals come in handy! (Bonus, they are one pot meals!)

Kielbasa Skillet Stew
5 strips of bacon
1 med. onion, chopped
1 lb fully cooked kielbasa, thinly sliced
2 cans (15 oz each) great northern beans, undrained
2 cans (8 oz each) tomato sauce
1 can (4 oz) chopped green chiles
2 med. carrots, thinly sliced
1/2 med. green pepper, chopped
1/2 tsp Italian seasoning
1/2 tsp dried thyme
1/8 tsp black pepper
We added a few cloves of minced garlic too
In a 12 inch skillet, cook bacon until crisp. Remove to a paper towel to drain. In drippings sautee onion and sausage until onion is tender (this is where we added the garlic). *If there's excessive amount of bacon fat, fee free to drain. We didn't. Stir in remaining ingredients and bring to a boil. Reduce heat; cover and simmer for 45 minutes until all vegetables are tender, stirring occasionally. Crumble bacon over the top. Serve over rice.

Ray Mack's Smoke Sausage Stew
Ingredients:
1 pack of Rogerwood Pork or Beef sausage (sliced)
6 ears whole corn on the cob (cut in half)
1 pound or more fresh string beans
8 or more large new white potatoes
2 large onions, sliced
3 tablespoon minced garlic
1 tablespoon parsley flakes
2 tablespoons lemon pepper
2 tablespoons Tones sweet and spicy seasoning
1/2 tablespoon cajun seasoning
1/2 tablespoon black pepper
2 tablespoons Knorr chicken flavor bouillon
2 tablespoon seafood boil seasoning
1 stick unsalted butter
Direction:
1. Wash and clean all of the veggies. Using a large stock or stew pot, place all ingredients in the pot. (Use your own judgment for measuring out the seasoning for this recipe, if you believe the measurements are to much listed above.)
2. Add water to the pot, do not fully cover the ingredients with water.
3. Turn your stove temperature to high heat, once your pot comes to a boil cover with a lid.
4. Cook for 15 minutes and check your potatoes for tenderness, When your potatoes are tender remove them only from the pot.
5. Reduce your pot temperature to medium high heat, Allow your water to reduce down by half.
6. Taste the broth to see if more seasonings are needed. Place your potatoes back in the pot and turn off your stove.

White Bean Soup Recipe with Spinach, Smoked Sausage
Easy White Bean Soup Recipe with spinach and smoked sausage in the slow cooker
AKA White Bean Stew Recipe
One 20 ounce pack of dried great northern beans
5 cups of chicken broth (stock) – I prefer the brand “Better Than Bouillon”
1 plum tomato
1 tsp Kosher salt
½ tsp black pepper
¼ tsp dried rosemary
4 garlic cloves (diced or smashed)
1 lb pack of smoked sausage (I like Conecuh smoked pork sausage)
5 ounces baby spinach
¼ cup parsley
Rinse beans and soak overnight following the directions on the package (usually 8 cups pf water). Use a large container as they grow!
Drain the beans and place in a slow cooker or Crock pot adding the chicken broth, tomato (sliced in half), salt, pepper, rosemary, and garlic
Cook for 7 hours on LOW
Add the sliced smoked sausage and cook for 20 more minutes
Add the spinach and parsley and stir for 1 minute, cook for another 20 minutes to blend the flavors

Today i'm going to show you how to make my Sausage & Bean Casserole. All cooked in one pot to save on the washing up and can be made ahead too!
This Big Batch Sausage and Bean One Pot is a great dish for a family gathering that can be made ahead of time.

Ingredients for the casserole:
2 tbsp olive oil
20-30 depending on how hungry your family are! good quality chipolata sausages (use gluten-free chipolatas if required)
1 large red onion peeled and roughly chopped
2 red peppers deseeded and roughly chopped
20 mini chorizo the bitesize ones, chopped in half
3 cloves garlic peeled and minced
2 tsp paprika
1 tsp dried thyme
120 ml (1/2 cup) red wine (optional)
2 chicken stock cubes crumbled (replace with 2 tsp vegetable bouillon for gluten free)
3 x 400g (14 oz) tins chopped tomatoes
1 x 400g (14oz) tin haricot beans, drained and rinsed
1 x 400g (14oz) tin cannellini beans, drained and rinsed
