How To make Banana Muffins
2 c Sifted flour
2 ts Backing soda
1/8 ts Salt
1 3/4 tb Sugar
1 ea Beaten egg
1 c Milk
3 tb Oil
3/4 c Mashed bananas.
In a bowl combine flour,baking powder,soda,salt and sugar.In another bowl combine egg,milkand oil.Add egg mixture to flour mixture.Blend in bananas.Grease 2 muffin tins liberally.Pour in batter to fill 2/3 of each cup.Bake at 375 c for 35 minutes.Use a toothpick to test for doneness.Remove tins to rack.Let stand for 5 min.With a greased knife cut around each cup.Invert tap to remove muffins. Serve immediatly with softened butter. ****Serves 6 *****

RECIPE
5 ripe bananas
½ cup white sugar
½ cup brown sugar
¼ cup (½ stick) melted butter
⅛ cup neutral oil (I use grapeseed oil)
1 tsp of vanilla extract
2 whole eggs
2 cups of all-purpose flour
1 tsp baking soda
½ tsp kosher salt
About 6 tsp of white sugar to top muffin batter before baking (1 tsp per muffin)
- Preheat oven to 375 degrees (I use my convection setting)
- Combine flour, baking soda, and salt in one bowl (dry mix)
- Mash ripe bananas in another bowl and then combine both sugars, melted butter, oil, and vanilla extract. Mix together.
- Add 2 eggs to the wet banana mix, whisk to combine
- Add dry mix to the wet mix in three batches, whisking to combine in between
- Grease your muffin tin with non-stick cooking spray
- Pour batter into muffin tin
- Top muffin batter with additional white sugar
- Bake for 22-24min

Ingredients
3 ripe bananas
¼ cup canola oil (may substitute vegetable oil) (60ml)
¼ cup unsalted butter melted and cooled at least 5 minutes (60g)
½ cup sugar (100g)
½ cup light brown sugar tightly packed (100g)
2 large eggs room temperature preferred
1 Tablespoon vanilla extract
2 cups all-purpose flour (250g)
1 ½ teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
¼ cup buttermilk (60ml) room temperature preferred
Streusel (optional)
1/2 cup all-purpose flour (65g)
1/2 cup brown sugar (100g)
1/4 teaspoon salt
1/4 cup unsalted butter, cold (60g)
Instructions
00:00 Introduction
Preheat oven to 425F (220C) and line a muffin tin with paper liners*
00:13 Place peeled bananas in a large bowl and use a fork or a potato masher to mash them - bananas should be well-mashed.
00:38 Add canola oil and melted butter and stir well.
00:55 Stir in sugars until well-combined.
01:05 Add eggs and vanilla extract and butermilk and stir well. Set aside.
01:24 In a separate bowl, whisk together your dry ingredients -- flour, baking powder, baking soda, and salt.
01:42 Add dry ingredients to your wet batter and gently fold in until ingredients are just combined (don't over-mix the batter!).
02:02 Portion batter into prepared muffin tin, filling each liner 3/4 of the way full. Set aside and prepare your Streusel topping.

Ingredients
For the muffins
* 3 large ripe bananas
* 3/4 cup white sugar
* 1 large egg
* 1/3 cup vegetable oil
* 1 1/2 cups all purpose flour
* 1 teaspoon baking powder
* 1 teaspoon baking soda
* 1/2 teaspoon salt
* 1/2 teaspoon cinnamon
* 1/4 teaspoon nutmeg (optional)
* 3/4 cups chopped walnuts
For the topping
* 3/4 cups chopped walnuts
* 2 tablespoons brown sugar
* 1 tablespoon melted butter
Instructions
* Preheat your oven to 350 degrees Fahrenheit and prepare a 12-cup muffin tin with paper liners (or grease very well with butter or cooking spray if you prefer not to use paper liners).
* Mash the bananas in a large bowl and mix in the sugar and egg with a wooden spoon until well blended.
* Add the vegetable oil and mix well.
* Add the flour, baking powder, baking soda, salt, cinnamon and nutmeg, along with 3/4 cup of the chopped walnuts. Adding the walnuts with the dry ingredients helps prevent over-mixing.
* Mix everything together just until the flour disappears and the walnuts are distributed evenly throughout the batter.
* In a small bowl, combine the remaining 3/4 cup walnuts, brown sugar and melted butter and mix until the walnuts are coated.
* Spoon the muffin batter evenly into the 12 muffin cups and spoon a bit of the coated walnuts onto the top of each one, making sure the topping is well distributed onto the top of each muffin (not in one big clump or it might sink into the muffin as it bakes!).
* Bake for about 20-23 minutes, or until the muffins are golden brown on top and a toothpick inserted into the center of one of the muffins comes out clean.
* Let the muffins cool in their tins for a few minutes before removing them to a wire rack to cool completely.
