Ingredients:
- 120 grams butter (1/2 cup)
- 1/4 teaspoon salt
- 120 grams of sugar (2/3 cup)
- 1/2 teaspoon vanilla extract
- 2 eggs
- 30 ml milk (2 tablespoons)
- 120 grams of wheat flour (2/3 cup)
- 1 teaspoon baking powder
- 20 grams of dry coconut flakes (1/3 cup)

In a medium sized bowl add 1 3/4 cup (100g) wheat bran
1/2 Cup (40g) oats
1 1/2 Tbsp (18g) sugar substitute
1/2 Tbsp (5g) ground cinnamon
1 Tsp baking powder
Pinch of salt
Combine and set aside
In a separate bowl get together your wet ingredients
2 mashed bananas
1/2 Cup (122g) unsweetened applesauce
1/2 Cup (113g) non-fat greek yogurt
1 Egg & 2 egg whites
1 Tsp of vanilla extract
Mix thoroughly
Pour wet into the dry and combine
Pour batter into a well greased muffin tin and fill the tins to the top
You should end up with about 7 muffins
Bake at 350 degrees | 177 Celsius for 45-50 minutes

Egg - 1
Oil - 80ml
Milk - 120ml
Yogurt - 1 tablespoon
Vanilla essence - 1 tablespoon

BANANA MUFFINS
Ingredients
3 very ripe bananas (medium/large)
115 grams butter at room temperature
3/4 cup sugar
2 large eggs
1 ½ cups all-purpose flour
1 tsp baking soda
½ tsp salt
½ tsp vanilla extract /1 tsp cinnamon powder
1 cup walnuts
½ cup raisins
Preheat the oven to 350°F.
In a mixing bowl, cream butter and sugar
Mash bananas with a fork until the consistency of chunky applesauce and add them to the batter along with 2 eggs, mixing until blended.
Sift together:flour, 1 tsp of baking soda and 1/2 tsp of salt then add to batter. Add 1/2 tsp of vanilla extract and mix in chopped walnuts and raisins. Pour into prepared cupcake molds and bake at 350 f for 50-60 minutes.
