How To make Banana Cake/Peanut Butter Icing
2 1/4 c All-purpose flour
1 1/4 ts Baking powder
1 ts Baking soda
1 ts Salt
1 c Mashed bananas; very ripe
about 2 large bananas 1 c Buttermilk; room temp
2/3 c Shortening
1 1/2 c Sugar
2 lg Eggs; room temp
1 ts Vanilla extract
:
icing--- 8 oz Cream cheese; softened
1/2 c Light corn syrup
1/2 c Creamy peanut butter
1 c Unsalted peanuts; chopped
Recipe by: Jo Merrill In a medium bowl, combine flour, baking powder, baking soda and salt; set aside. In another bowl, combine bananas and buttermilk; set aside. Cream together the shortening and sugar in a large bowl, beating until light and fluffy. Add eggs one at a time, beating well after each addition. Beat in vanilla extract. Alternately add flour mixture and banana mixture, beginning and ending with flour. Beat until well blended. Spread evenly in greased and flour 13 by 9 by 2-inch pan. Bake in preheated 350 degree oven for 30-35 minutes until a wooden pick inserted in center comes out clean. Cool cake completely in pan on wire rack. To make icing: Mix together the cream cheese and corn syrup until smooth. Add peanut butter; beat until well-blended. Spread on cooled cake. Garnish with chopped peanuts. BANANA CAKE with CREAM CHEESE & PEANUT BUTTER FROSTING
2 cups SUGAR
1-1/2 cups CRISCO OIL
3 EGGS
4 BANANAS
3 cups ALL PURPOSE FLOUR
1 teaspoon CINNAMON
1 teaspoon NUTMEG
2 teaspoons Baking Soda
1/2 teaspoon SALT
1 cup chopped PECANS
FROSTING:
1 STICK softened BUTTER
1 - 8 ounce package softened CREAM CHEESE
1- 16 ounce (1 pound) box POWDERED SUGAR, (3-1/2 CUPS)
1 teaspoon VANILLA

2 cups confectioners' sugar
1 teaspoon vanilla extract
3 to 4 tablespoons milk

0:10 In a large bowl, combine the bananas, mayonnaise, and vanilla until well blended. In the same bowl, sift the flour, sugar, baking soda, and salt.

0:44 Scoop the batter into each paper-lined muffin cup. Top each with a chocolate kiss, pointed side down. Fill cups two-thirds full with the remaining batter.
1:01 Bake at 350 degrees F for 20 to 25 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely.
1:12 Prepare the frosting while baking the cupcakes. In a large bowl, combine the peanut butter, confectioners' sugar, vanilla, and enough milk to achieve spreading consistency.

Peanut Butter Frosting Recipe for Chocolate Cake
This tutorial shows a recipe for peanut butter frosting for a chocolate cake. This peanut butter frosting is very smooth and simple to make using only 6 ingredients. Peanut butter frosting is perfect for chocolate cake, cupcakes, or to spread on chocolate cookies or brownies.
Ingredients:
1 cup of unsalted butter
1 cup creamy peanut butter
3 cups of sifted powdered sugar
1 tsp of vanilla extract
1/2 tsp salt
2 tbsp of milk
(1 tbsp of water + 1/2 cup powdered sugar optional to thin it out for a more pipeable consistency)
Directions
1. Start by creaming the peanut butter and butter in a mixing bowl until well combined.
2. Add the sifted powdered sugar in 1/3 cup increments and mix. Sifting the powdered sugar helps prevent lumps forming in the frosting.
3. Add the vanilla extract and salt and mix until well combined. Once those ingredients are mixed, add the milk in and continue mixing.
4. If you want a more pipeable or easy to spread frosting, add half a cup of extra powdered sugar and a tablespoon of water. Keep adding these a little at a time until you are happy with the consistency of the frosting.
